🍽️ Chicken breast with fresh parsley sauce and green beans

Ingredients
- 4 chicken breast fillets
- 4 tbsp vegetable oil
- 1 large parsley
- 50 g grated Parmesan
- 30 g pine nuts
- 0.125 l oil
- salt
- 1 unwaxed lemon
- 2 tbsp capers
- 500 g green beans
- salt
- pepper (from the mill)
Instructions
- 1. Rinse the chicken breast fillets under running water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Season the fillets generously on both sides with salt and black pepper.
- 4. Heat the oil in a large pan over medium-high heat.
- 5. Sear the chicken breast fillets for five minutes on each side until golden brown.
- 6. Remove the cooked fillets from the pan and let them cool on a plate.
- 7. Wash the parsley thoroughly and pat it dry.
- 8. Chop the parsley very finely.
- 9. Finely chop the pine nuts as well.
- 10. Peel the garlic clove.
- 11. Place the parsley, pine nuts, garlic, and a pinch of salt into a mortar.
- 12. Pound the ingredients in the mortar to form a coarse paste.
- 13. Stir in the oil gradually until a creamy sauce forms.
- 14. Grate the lemon peel into fine strips using a zester.
- 15. Wash the green beans thoroughly.
- 16. Break or cut off the hard ends of the beans.
- 17. Cook the beans in boiling salted water for eight minutes.
- 18. Remove the beans from the water and immediately shock them in cold water to stop the cooking process.
- 19. Cut the cooled chicken breast into bite-sized pieces or strips.
- 20. Serve the chicken together with the green beans and the parsley sauce.
- 21. Sprinkle the dish with the capers and the lemon zest.
- 22. Finish by seasoning everything with freshly ground pepper from a mill.
