🍽️ Crispy Chicken with Creamy Parmesan Sauce

Ingredients
- 8 Chicken (breast with skin)
- Salt
- Pepper
- 2 tbsp Olive oil (20 ml each)
- 2 sprigs Sage
- 1 large Onion
- 1 head Garlic
- 1 tbsp Oil (10 ml each)
- 400 ml Heavy cream
- 1 tbsp Salt
- 1 tbsp Pepper
- 50 g Parmesan (grated, 30% fat in dry matter)
- 0.5 bunch Sage

Instructions
- 1. Preheat the oven to 180 degrees Celsius. If using fan-assisted heat, set it to 160 degrees. For gas ovens, use setting 2 to 3.
- 2. Rub the chicken breast fillets generously with salt and season lightly with pepper.
- 3. Heat some oil in an oven-safe pan. Sear the chicken breasts on all sides until golden brown.
- 4. Place the chicken breasts in the pan with the skin side facing up and put them in the oven. Bake for about 30 minutes.
- 5. Wash the sage leaves under cold water and shake them dry thoroughly.
- 6. Pluck the dry sage leaves off the stems.
- 7. Peel the onion and cut it in half.
- 8. Cut the onion halves into very fine dice.
- 9. Peel the garlic cloves and chop them finely.
- 10. Heat one tablespoon of olive oil in a separate pan over medium heat.
- 11. Sauté the onion cubes in the oil until they are soft.
- 12. Add the chopped garlic and sauté it for 2 minutes.
- 13. Deglaze the onions with cream.
- 14. Stir the grated Parmesan into the sauce.
- 15. Let the sauce simmer for about 5 minutes. Stir it occasionally.
- 16. Pour the sauce into a tall bowl.
- 17. Blend the sauce smooth using a hand blender.
- 18. Return the remaining cream, sage leaves, and garlic to the blended sauce.
- 19. Season the sauce with salt and pepper to taste.
- 20. Put the sauce in a pot and let it simmer over low heat for about 8 minutes.
- 21. If the sauce becomes too thick, add a little water.
- 22. Remove the chicken breasts from the oven after the baking time.
- 23. Sprinkle the chicken breasts with fresh sage and Parmesan.
- 24. Preheat the oven to 200 degrees (180 degrees for fan-assisted, gas setting 3).
- 25. Broil the chicken breasts for 10 minutes in the oven until the cheese is golden brown.
- 26. Serve the chicken with the Parmesan sauce.
- 27. Garnish the dish with fresh sage leaves and serve hot.
