🍽️ Chicken with Oriental Spice Mix and Fig-Orange Glaze

Ingredients
- 2 dried figs
- 1 untreated orange
- 2 chicken (kitchen-ready, 800 g - 1 kg)
- 4 garlic cloves
- 5 cm ginger
- salt
- cayenne pepper
- 2 tbsp honey
- 4 tbsp olive oil
- 1 tbsp baharat
- olive oil (for the baking dish)
- 1 handful herbs (e.g. peppermint, sage)
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Wash the figs and cut them into very small cubes.
- 3. Wash the orange under hot water and dry it thoroughly.
- 4. Finely grate the orange peel, avoiding the white bitter pith.
- 5. Squeeze the juice out of the orange.
- 6. Pour 2 to 3 tablespoons of the orange juice over the fig cubes.
- 7. Fold the orange zest into the figs.
- 8. Rinse the chicken under running water.
- 9. Pat the chicken dry with kitchen paper.
- 10. Peel the garlic and the ginger.
- 11. Finely chop the garlic and the ginger.
- 12. Put the chopped garlic and ginger mixture inside the chicken.
- 13. Season the inside of the chicken with salt and cayenne pepper.
- 14. Tie the chicken together with kitchen twine.
- 15. Mix the honey with the oil.
- 16. Stir the Baharat spice mix into the honey-oil mixture.
- 17. Add the fig-orange mixture to the sauce.
- 18. Finally season the sauce with salt and cayenne pepper.
- 19. Brush the chicken thoroughly with the sauce.
- 20. Place the chicken in a lightly oiled baking dish.
- 21. Shake the herbs dry and add them to the dish.
- 22. Roast the chicken in the oven for about 1 hour.
- 23. Pour in a little water into the dish if needed to prevent drying out.
- 24. Serve the chicken, for example, with couscous.
