  1. 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  2. 2. Wash the figs and cut them into very small cubes.
  3. 3. Wash the orange under hot water and dry it thoroughly.
  4. 4. Finely grate the orange peel, avoiding the white bitter pith.
  5. 5. Squeeze the juice out of the orange.
  6. 6. Pour 2 to 3 tablespoons of the orange juice over the fig cubes.
  7. 7. Fold the orange zest into the figs.
  8. 8. Rinse the chicken under running water.
  9. 9. Pat the chicken dry with kitchen paper.
  10. 10. Peel the garlic and the ginger.
  11. 11. Finely chop the garlic and the ginger.
  12. 12. Put the chopped garlic and ginger mixture inside the chicken.
  13. 13. Season the inside of the chicken with salt and cayenne pepper.
  14. 14. Tie the chicken together with kitchen twine.
  15. 15. Mix the honey with the oil.
  16. 16. Stir the Baharat spice mix into the honey-oil mixture.
  17. 17. Add the fig-orange mixture to the sauce.
  18. 18. Finally season the sauce with salt and cayenne pepper.
  19. 19. Brush the chicken thoroughly with the sauce.
  20. 20. Place the chicken in a lightly oiled baking dish.
  21. 21. Shake the herbs dry and add them to the dish.
  22. 22. Roast the chicken in the oven for about 1 hour.
  23. 23. Pour in a little water into the dish if needed to prevent drying out.
  24. 24. Serve the chicken, for example, with couscous.
