🍽️ Crispy Chicken with Orange Honey Glaze

Ingredients
- 1 chicken (approx. 1, 4 kg)
- 200 g plums
- 2 sprigs rosemary
- 2 shallots
- 2 tbsp olive oil
- 50 g almond slivers
- salt
- pepper (from the mill)
- olive oil (for the baking dish)
- 1 unpeeled orange (juice and zest)
- 50 g honey
- 10 g butter
Instructions
- 1. Preheat the oven to 200 degrees Celsius using top and bottom heat.
- 2. Wash the chicken and pat it dry thoroughly with a kitchen towel.
- 3. Cut the chicken into 8 to 10 portions using kitchen shears.
- 4. Season the meat pieces with salt and pepper.
- 5. Wash the plums and remove the pits.
- 6. Cut the plums into small cubes.
- 7. Rinse the rosemary and shake it dry.
- 8. Pluck the rosemary needles from the stems.
- 9. Peel the shallots and chop them finely.
- 10. Mix the oil with the almond flakes, plums, rosemary, and shallots.
- 11. Rub this mixture under the skin of the chicken pieces.
- 12. Season the chicken pieces generously with salt and pepper.
- 13. Place everything in a baking dish.
- 14. Bake the chicken in the oven for about 30 minutes.
- 15. Heat the orange juice, orange zest, honey, and butter in a saucepan.
- 16. Let the sauce simmer for about 10 minutes on low heat.
- 17. Continue simmering until the sauce thickens slightly.
- 18. Remove the chicken from the oven.
- 19. Pour the orange honey sauce over the chicken.
- 20. Serve the dish immediately.
