  2. 2. Wash the chicken and pat it dry thoroughly with a kitchen towel.
  3. 3. Cut the chicken into 8 to 10 portions using kitchen shears.
  4. 4. Season the meat pieces with salt and pepper.
  5. 5. Wash the plums and remove the pits.
  6. 6. Cut the plums into small cubes.
  7. 7. Rinse the rosemary and shake it dry.
  8. 8. Pluck the rosemary needles from the stems.
  9. 9. Peel the shallots and chop them finely.
  10. 10. Mix the oil with the almond flakes, plums, rosemary, and shallots.
  11. 11. Rub this mixture under the skin of the chicken pieces.
  12. 12. Season the chicken pieces generously with salt and pepper.
  13. 13. Place everything in a baking dish.
  14. 14. Bake the chicken in the oven for about 30 minutes.
  15. 15. Heat the orange juice, orange zest, honey, and butter in a saucepan.
  16. 16. Let the sauce simmer for about 10 minutes on low heat.
