🍽️ Chicken pieces in creamy morel sauce

Ingredients
- 50 g dried morels
- 1 onion
- 1 garlic clove
- 1 chicken (approx. 1,2 kg)
- salt
- pepper
- 2 tbsp flour
- 1 tbsp ghee
- 150 ml dry white wine
- 100 g crème fraîche
- 2 tbsp fresh chopped parsley
Instructions
- 1. Pour about 250 milliliters of water over the dried morels and let them soak for 30 minutes.
- 2. Pour the morels through a sieve to separate them from the water.
- 3. Strain the soaking water through a fine cloth or coffee filter to clarify it.
- 4. Reserve the filtered mushroom water in a container.
- 5. Rinse the soaked morels briefly with clear water.
- 6. Let the morels drain well.
- 7. Peel the onion and the garlic.
- 8. Cut the onion and garlic into very small cubes.
- 9. Rinse the chicken pieces under running water.
- 10. Pat the chicken completely dry with kitchen paper.
- 11. Divide the chicken into 8 equal pieces.
- 12. Season the chicken pieces with salt and pepper.
- 13. Coat the chicken pieces in flour until lightly covered.
- 14. Shake off any excess flour from the pieces.
- 15. Heat ghee (clarified butter) in a large pan.
- 16. Fry the chicken pieces in batches until golden brown on all sides.
- 17. Remove the browned chicken pieces from the pan and set them aside.
- 18. Fry the onion cubes and garlic in the pan juices until golden brown.
- 19. Deglaze the pan with the wine.
- 20. Pour the reserved mushroom water into the onion mixture.
- 21. Place the chicken pieces back into the sauce.
- 22. Cover the pan and let the chicken cook on low heat for about 25 minutes.
- 23. Turn the chicken pieces occasionally during the cooking time.
- 24. Add a little water if necessary, as the sauce reduces too much.
- 25. Add the drained morels during the last 10 minutes of cooking.
- 26. Stir the crème fraîche into the finished sauce.
- 27. Season the sauce to taste with salt and pepper.
- 28. Sprinkle the dish with fresh parsley.
- 29. Serve the chicken hot.
