  1. 1. Pour about 250 milliliters of water over the dried morels and let them soak for 30 minutes.
  2. 2. Pour the morels through a sieve to separate them from the water.
  3. 3. Strain the soaking water through a fine cloth or coffee filter to clarify it.
  4. 4. Reserve the filtered mushroom water in a container.
  5. 5. Rinse the soaked morels briefly with clear water.
  6. 6. Let the morels drain well.
  7. 7. Peel the onion and the garlic.
  8. 8. Cut the onion and garlic into very small cubes.
  9. 9. Rinse the chicken pieces under running water.
  10. 10. Pat the chicken completely dry with kitchen paper.
  11. 11. Divide the chicken into 8 equal pieces.
  12. 12. Season the chicken pieces with salt and pepper.
  13. 13. Coat the chicken pieces in flour until lightly covered.
  14. 14. Shake off any excess flour from the pieces.
  15. 15. Heat ghee (clarified butter) in a large pan.
  16. 16. Fry the chicken pieces in batches until golden brown on all sides.
  17. 17. Remove the browned chicken pieces from the pan and set them aside.
  18. 18. Fry the onion cubes and garlic in the pan juices until golden brown.
  19. 19. Deglaze the pan with the wine.
  20. 20. Pour the reserved mushroom water into the onion mixture.
  21. 21. Place the chicken pieces back into the sauce.
  22. 22. Cover the pan and let the chicken cook on low heat for about 25 minutes.
  23. 23. Turn the chicken pieces occasionally during the cooking time.
  24. 24. Add a little water if necessary, as the sauce reduces too much.
  25. 25. Add the drained morels during the last 10 minutes of cooking.
  26. 26. Stir the crème fraîche into the finished sauce.
  27. 27. Season the sauce to taste with salt and pepper.
  28. 28. Sprinkle the dish with fresh parsley.
  29. 29. Serve the chicken hot.
