🍽️ Chicken with Vegetables and Rice

Ingredients
- 60 g basmati rice
- 1 piece ginger (approx. 2 cm)
- 2 garlic cloves
- 250 g chicken breast fillet
- 2 tbsp lime juice
- 2 tbsp soy sauce
- 1 tbsp peanut oil
- 100 g snow peas
- 1 larger red bell pepper
- 2 tbsp butter
- 80 g bamboo shoots
- salt
- coriander leaves (for garnish)
Instructions
- 1. Cook the basmati rice in salted water until al dente.
- 2. Drain the rice in a colander and let it drip dry.
- 3. Peel the ginger and the garlic clove.
- 4. Finely chop the ginger and garlic.
- 5. Cut the chicken fillet into thin strips.
- 6. Marinate the chicken strips with the chopped ginger, garlic, lime juice, soy sauce, and peanut oil.
- 7. Clean the snow peas and halve them.
- 8. Blanch the snow peas in boiling salted water for 2 to 3 minutes.
- 9. Drain the snow peas in a colander.
- 10. Shock the snow peas with cold water and let them drip dry.
- 11. Wash the bell pepper, clean it, and remove the core.
- 12. Cut the bell pepper into pieces.
- 13. Heat the butter in a pan.
- 14. Fry the meat in the pan until golden brown, stirring occasionally.
- 15. Add the snow peas, bell pepper, and bamboo shoots to the pan.
- 16. Cook the vegetables for 2 to 3 minutes.
- 17. Serve the chicken with vegetables and rice in bowls.
- 18. Garnish the dish with coriander leaves.
