  2. 2. Drain the rice in a colander and let it drip dry.
  3. 3. Peel the ginger and the garlic clove.
  4. 4. Finely chop the ginger and garlic.
  5. 5. Cut the chicken fillet into thin strips.
  6. 6. Marinate the chicken strips with the chopped ginger, garlic, lime juice, soy sauce, and peanut oil.
  7. 7. Clean the snow peas and halve them.
  8. 8. Blanch the snow peas in boiling salted water for 2 to 3 minutes.
  9. 9. Drain the snow peas in a colander.
  10. 10. Shock the snow peas with cold water and let them drip dry.
  11. 11. Wash the bell pepper, clean it, and remove the core.
  12. 12. Cut the bell pepper into pieces.
  13. 13. Heat the butter in a pan.
  14. 14. Fry the meat in the pan until golden brown, stirring occasionally.
  15. 15. Add the snow peas, bell pepper, and bamboo shoots to the pan.
  16. 16. Cook the vegetables for 2 to 3 minutes.
  17. 17. Serve the chicken with vegetables and rice in bowls.
  18. 18. Garnish the dish with coriander leaves.
