  1. 1. Peel the onion and chop it into coarse cubes.
  2. 2. Peel the pineapple, remove the hard core, and dice the flesh into small pieces.
  3. 3. Set aside about half of the pineapple cubes for garnishing.
  4. 4. Wash the nectarine, halve it, remove the pit, and cut it into pieces.
  5. 5. Heat 1 tablespoon of oil in a pot.
  6. 6. Add the onion, pineapple, and nectarine to the pot and sauté for 1 to 2 minutes.
  7. 7. Stir in the curry powder briefly.
  8. 8. Add the split vanilla pod.
  9. 9. Wash the chili pepper, halve it, remove the seeds, and chop it finely.
  10. 10. Trim the lemongrass and slice it into rings.
  11. 11. Add the chili and lemongrass to the pot.
  12. 12. Deglaze the mixture with the broth and coconut milk.
  13. 13. Let the soup simmer for about 10 minutes.
  14. 14. Rinse the chicken breasts and pat them dry.
  15. 15. Cut the chicken into pieces.
  16. 16. Season the meat with salt and pepper.
  17. 17. Heat 1 tablespoon of oil in a non-stick pan.
  18. 18. Fry the chicken for 4 to 5 minutes until golden brown.
  19. 19. Let the meat finish cooking over low heat.
  20. 20. Halve the pomegranate and remove the seeds.
  21. 21. Remove the white membranes from the seeds.
  22. 22. Wash the spring onions, trim them, and slice them diagonally into rings.
  23. 23. Heat the remaining oil in another pan.
  24. 24. Add the pomegranate seeds, spring onions, and remaining pineapple to the pan.
  25. 25. Let the fruits heat up briefly.
  26. 26. Season the soup with salt and chili to taste.
  27. 27. Briefly froth the soup with a hand blender.
  28. 28. Distribute the chicken onto the plates.
  29. 29. Pour the soup over the meat.
  30. 30. Garnish the dish with the fruit mixture and serve.
