🍽️ Chicken Curry with Fresh Fruits

Ingredients
- 1 mild vegetable onion
- 0.5 pineapple
- 1 nectarine
- 3 tbsp vegetable oil
- 2 tbsp curry powder
- 2 vanilla pods
- 1 red chili pepper
- 1 stalk lemongrass
- 400 ml poultry broth
- 400 ml coconut milk
- 500 g chicken breast fillet
- salt
- pepper
- 1 pomegranate
- 2 spring onions

Instructions
- 1. Peel the onion and chop it into coarse cubes.
- 2. Peel the pineapple, remove the hard core, and dice the flesh into small pieces.
- 3. Set aside about half of the pineapple cubes for garnishing.
- 4. Wash the nectarine, halve it, remove the pit, and cut it into pieces.
- 5. Heat 1 tablespoon of oil in a pot.
- 6. Add the onion, pineapple, and nectarine to the pot and sauté for 1 to 2 minutes.
- 7. Stir in the curry powder briefly.
- 8. Add the split vanilla pod.
- 9. Wash the chili pepper, halve it, remove the seeds, and chop it finely.
- 10. Trim the lemongrass and slice it into rings.
- 11. Add the chili and lemongrass to the pot.
- 12. Deglaze the mixture with the broth and coconut milk.
- 13. Let the soup simmer for about 10 minutes.
- 14. Rinse the chicken breasts and pat them dry.
- 15. Cut the chicken into pieces.
- 16. Season the meat with salt and pepper.
- 17. Heat 1 tablespoon of oil in a non-stick pan.
- 18. Fry the chicken for 4 to 5 minutes until golden brown.
- 19. Let the meat finish cooking over low heat.
- 20. Halve the pomegranate and remove the seeds.
- 21. Remove the white membranes from the seeds.
- 22. Wash the spring onions, trim them, and slice them diagonally into rings.
- 23. Heat the remaining oil in another pan.
- 24. Add the pomegranate seeds, spring onions, and remaining pineapple to the pan.
- 25. Let the fruits heat up briefly.
- 26. Season the soup with salt and chili to taste.
- 27. Briefly froth the soup with a hand blender.
- 28. Distribute the chicken onto the plates.
- 29. Pour the soup over the meat.
- 30. Garnish the dish with the fruit mixture and serve.
