🍽️ Crispy Chicken with Apple Cider Sauce

Ingredients
- 4 chicken drumsticks
- salt
- pepper
- 2 tbsp clarified butter
- 2 shallots
- 350 ml cider
- 2 tart apples (e.g. Boskop)
- 3 sprigs thyme
- 100 g crème fraîche
Instructions
- 1. Rinse the chicken drumsticks under cold water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Season the drumsticks generously with salt and pepper.
- 4. Heat ghee (clarified butter) in a large casserole dish.
- 5. Fry the chicken drumsticks on all sides for 5 to 8 minutes until golden brown over high heat.
- 6. Remove the browned drumsticks from the casserole and set them aside.
- 7. Peel the shallots and chop them into small cubes.
- 8. Sauté the shallots briefly in the remaining fat in the casserole.
- 9. Deglaze the mixture with cider (apple wine).
- 10. Peel the apples and remove the core.
- 11. Cut the apples into quarters and then into thin wedges.
- 12. Wash the thyme sprigs and shake them dry.
- 13. Add the apple wedges and thyme to the shallots in the casserole.
- 14. Place the chicken drumsticks back into the casserole.
- 15. Preheat the oven to 180 °C (convection 160 °C or gas mark 2–3).
- 16. Cook the dish in the preheated oven for approx. 25 minutes.
- 17. Add a little more cider if necessary, as the liquid may evaporate quickly.
- 18. Increase the temperature briefly at the end of the cooking time to make the chicken skin crispy.
- 19. Carefully remove the casserole from the oven.
- 20. Stir the crème fraîche into the sauce.
- 21. Season the sauce to taste with salt and pepper.
- 22. Serve the chicken with the apple sauce.
- 23. Serve rosemary potatoes as a suitable side dish.
