  1. 1. Rinse the chicken drumsticks under cold water.
  2. 2. Pat the meat completely dry with a kitchen towel.
  3. 3. Season the drumsticks generously with salt and pepper.
  4. 4. Heat ghee (clarified butter) in a large casserole dish.
  5. 5. Fry the chicken drumsticks on all sides for 5 to 8 minutes until golden brown over high heat.
  6. 6. Remove the browned drumsticks from the casserole and set them aside.
  7. 7. Peel the shallots and chop them into small cubes.
  8. 8. Sauté the shallots briefly in the remaining fat in the casserole.
  9. 9. Deglaze the mixture with cider (apple wine).
  10. 10. Peel the apples and remove the core.
  11. 11. Cut the apples into quarters and then into thin wedges.
  12. 12. Wash the thyme sprigs and shake them dry.
  13. 13. Add the apple wedges and thyme to the shallots in the casserole.
  14. 14. Place the chicken drumsticks back into the casserole.
  15. 15. Preheat the oven to 180 °C (convection 160 °C or gas mark 2–3).
  16. 16. Cook the dish in the preheated oven for approx. 25 minutes.
  17. 17. Add a little more cider if necessary, as the liquid may evaporate quickly.
  18. 18. Increase the temperature briefly at the end of the cooking time to make the chicken skin crispy.
  19. 19. Carefully remove the casserole from the oven.
  20. 20. Stir the crème fraîche into the sauce.
  21. 21. Season the sauce to taste with salt and pepper.
  22. 22. Serve the chicken with the apple sauce.
  23. 23. Serve rosemary potatoes as a suitable side dish.
