  2. 2. Cut off the hard ends of the zucchini.
  3. 3. Use a spiralizer to cut the zucchini into long, thin noodles.
  4. 4. Wash the cherry tomatoes thoroughly.
  5. 5. Cut the washed cherry tomatoes in half.
  6. 6. Peel the shallot completely.
  7. 7. Slice the peeled shallot into thin rings.
  8. 8. Wash the fresh basil.
  9. 9. Shake the basil dry to remove excess water.
  10. 10. Gently pluck the basil leaves from the stems.
  11. 11. Put the vinegar into a small bowl.
  12. 12. Add salt and pepper to the vinegar.
  13. 13. Add two tablespoons of olive oil to the bowl.
  14. 14. Whisk the dressing ingredients well together.
  15. 15. Add the halved tomatoes to the bowl.
  16. 16. Add the shallot rings to the bowl.
  17. 17. Mix the tomatoes and shallots briefly with the dressing.
  18. 18. Set the bowl with the salad aside.
  19. 19. Pat the chicken breast fillets dry with kitchen paper.
  20. 20. Season the fillets with salt and pepper.
  21. 21. Coat the fillets in the flour until they are completely covered.
  22. 22. Whisk the eggs in a separate bowl.
  23. 23. Stir the Parmesan into the whisked eggs.
  24. 24. Coat the floured fillets in the egg and Parmesan mixture.
  25. 25. Heat rapeseed oil in a frying pan.
  26. 26. Fry the chicken on the first side for about three minutes over medium heat.
  27. 27. Turn the meat and fry it on the second side for another three minutes.
  28. 28. Heat the remaining olive oil in a second pan.
  29. 29. Add the zucchini noodles to the hot pan.
  30. 30. Sauté the zucchini noodles for two minutes over medium heat.

  32. 32. Let the fried chicken drain briefly on kitchen paper.
  33. 33. Take two-thirds of the basil leaves.
  34. 34. Mix this portion of basil into the tomato salad.
  35. 35. Divide the salad evenly among the plates.
  36. 36. Garnish the salad with the remaining fresh basil.
  37. 37. Place the chicken next to the salad.
  38. 38. Add the zucchini noodles to the plate as well.
