🍽️ Chicken Milanese with Zucchini Spaghetti and Fresh Tomato Salad

Ingredients
- 3 small zucchini (each 200 g)
- 350 g cherry tomatoes
- 1 shallot
- 4 sprigs basil
- 2 tbsp white balsamic vinegar
- salt
- pepper
- 4 tbsp olive oil
- 600 g chicken breast fillet
- 2 tbsp spelt wholemeal flour (each 15 g)
- 2 eggs
- 60 g grated parmesan (30 % fat in dry matter)
- 4 tbsp rapeseed oil
Instructions
- 1. Wash the zucchini under running water.
- 2. Cut off the hard ends of the zucchini.
- 3. Use a spiralizer to cut the zucchini into long, thin noodles.
- 4. Wash the cherry tomatoes thoroughly.
- 5. Cut the washed cherry tomatoes in half.
- 6. Peel the shallot completely.
- 7. Slice the peeled shallot into thin rings.
- 8. Wash the fresh basil.
- 9. Shake the basil dry to remove excess water.
- 10. Gently pluck the basil leaves from the stems.
- 11. Put the vinegar into a small bowl.
- 12. Add salt and pepper to the vinegar.
- 13. Add two tablespoons of olive oil to the bowl.
- 14. Whisk the dressing ingredients well together.
- 15. Add the halved tomatoes to the bowl.
- 16. Add the shallot rings to the bowl.
- 17. Mix the tomatoes and shallots briefly with the dressing.
- 18. Set the bowl with the salad aside.
- 19. Pat the chicken breast fillets dry with kitchen paper.
- 20. Season the fillets with salt and pepper.
- 21. Coat the fillets in the flour until they are completely covered.
- 22. Whisk the eggs in a separate bowl.
- 23. Stir the Parmesan into the whisked eggs.
- 24. Coat the floured fillets in the egg and Parmesan mixture.
- 25. Heat rapeseed oil in a frying pan.
- 26. Fry the chicken on the first side for about three minutes over medium heat.
- 27. Turn the meat and fry it on the second side for another three minutes.
- 28. Heat the remaining olive oil in a second pan.
- 29. Add the zucchini noodles to the hot pan.
- 30. Sauté the zucchini noodles for two minutes over medium heat.
- 31. Season the zucchini noodles with salt and pepper.
- 32. Let the fried chicken drain briefly on kitchen paper.
- 33. Take two-thirds of the basil leaves.
- 34. Mix this portion of basil into the tomato salad.
- 35. Divide the salad evenly among the plates.
- 36. Garnish the salad with the remaining fresh basil.
- 37. Place the chicken next to the salad.
- 38. Add the zucchini noodles to the plate as well.
