🍽️ Crispy Toast with Chicken and Mango

Ingredients
- 1 red onion
- 2 sprigs thyme
- 1 tbsp olive oil
- 1 tbsp white wine vinegar
- 1 tbsp honey
- salt
- pepper
- 300 g mango (1 small mango)
- 10 g arugula (1 handful)
- 4 slices whole wheat toast
- 100 g cream cheese (45% fat in dry matter)
- 200 g smoked chicken breast slices (sliced)
- 0.5 tsp smoked paprika powder
Instructions
- 1. Peel the onion and cut it into fine cubes.
- 2. Wash the thyme and pat it dry with a kitchen towel.
- 3. Pluck the thyme leaves from the stems.
- 4. Put the onion cubes and thyme leaves into a small bowl.
- 5. Add oil, vinegar, and honey to the bowl.
- 6. Stir the mixture well.
- 7. Season the marinade with salt and pepper.
- 8. Peel the mango and slice the flesh into thin slices.
- 9. Wash the arugula thoroughly.
- 10. Spin the arugula dry or pat it off.
- 11. Remove coarse stems from the arugula, if present.
- 12. Place the toast slices in the toaster.
- 13. Toast the bread slices for 4 to 5 minutes until golden brown.
- 14. Spread the warm toast slices evenly with cream cheese.
- 15. Distribute the arugula over the cream cheese layer.
- 16. Place the chicken breast slices on the arugula.
- 17. Arrange the mango slices on the chicken.
- 18. Drizzle the onion-honey mixture over the toasts.
- 19. Sprinkle smoked paprika powder over the top as a finish.
