  3. 3. Pluck the thyme leaves from the stems.
  4. 4. Put the onion cubes and thyme leaves into a small bowl.
  5. 5. Add oil, vinegar, and honey to the bowl.
  6. 6. Stir the mixture well.
  7. 7. Season the marinade with salt and pepper.
  8. 8. Peel the mango and slice the flesh into thin slices.
  9. 9. Wash the arugula thoroughly.
  10. 10. Spin the arugula dry or pat it off.
  11. 11. Remove coarse stems from the arugula, if present.
  12. 12. Place the toast slices in the toaster.
  13. 13. Toast the bread slices for 4 to 5 minutes until golden brown.
  14. 14. Spread the warm toast slices evenly with cream cheese.
  15. 15. Distribute the arugula over the cream cheese layer.
  16. 16. Place the chicken breast slices on the arugula.
