🍲 Cozy Chicken and Corn Stew

Ingredients
- 1.5 kg chicken (1 chicken)
- 2 onions (diced)
- 600 ml chicken broth
- 200 g potatoes
- 200 g corn kernels
- 4 tomatoes
- 2 garlic cloves
- 2 green chili peppers (chopped)
- salt
- 2 tbsp paprika powder
- cayenne pepper
Instructions
- 1. Rinse the chicken meat thoroughly.
- 2. Remove the bones and skin from the meat.
- 3. Place the deboned and skinless meat into a large pot.
- 4. Dice the onions.
- 5. Sprinkle the onion cubes over the meat in the pot.
- 6. Peel the potatoes.
- 7. Cut the peeled potatoes into small cubes.
- 8. Wash the tomatoes under running water.
- 9. Remove the hard stem area from the top of the tomatoes.
- 10. Cut the tomatoes into quarters.
- 11. Peel the garlic cloves.
- 12. Finely chop the garlic.
- 13. Add the potato cubes to the onions and meat in the pot.
- 14. Sprinkle paprika powder over the ingredients in the pot.
- 15. Add the chopped garlic to the pot.
- 16. Add the chili peppers to the pot.
- 17. Add the tomato quarters to the pot.
- 18. Season everything with salt.
- 19. Season everything with freshly ground pepper.
- 20. Pour the broth into the pot.
- 21. Place a lid on the pot.
- 22. Bring the contents of the pot to a boil.
- 23. Reduce the heat to a low setting.
- 24. Let the stew simmer for approx. 30 minutes on low heat.
- 25. Add the corn to the pot.
- 26. Let the stew simmer for another approx. 10 minutes.
- 27. Finally, adjust the seasoning of the stew with salt and pepper.
- 28. If desired, thicken the sauce with a little starch.
