🍽️ Crispy Chicken with Orange-Garlic Marinade

Ingredients
- 1 chicken (kitchen-ready, approx. 1,5 kg)
- 4 garlic cloves (chopped)
- sea salt
- 50 g soft butter
- 1 red chili pepper (finely chopped without seeds)
- 1 tbsp olive oil
- 50 ml lemon juice
- 200 ml orange juice
- 100 ml olive oil
- 20 ml lemon liqueur
- 1 tbsp parsley (chopped)
- 1 untreated organic orange (use the zest)
- 50 g black olives
- 1 tbsp olive oil
Instructions
- 1. Cut the chicken into 12 equal pieces.
- 2. Mix the garlic with about 1 teaspoon of salt, the butter, and the pepperoni in a small bowl to form a paste.
- 3. Coat all chicken pieces thoroughly with this marinade.
- 4. Let the meat marinate for about 30 minutes.
- 5. Heat 1 tablespoon of oil in a pan and sear the chicken pieces briefly over high heat.
- 6. Preheat the oven to 180 degrees Celsius for top and bottom heat.
- 7. Place the seared pieces in a baking dish and put them in the oven for 40 to 45 minutes.
- 8. Baste the meat frequently with the pan juices during the roasting time.
- 9. Add a little water if necessary to prevent the meat from drying out.
- 10. Remove the chicken from the oven and let it rest briefly.
- 11. Taste the dish one last time before serving.
- 12. Serve the chicken with crispy white bread as desired.
