🍽️ Chicken cubes in creamy curry pea sauce

Ingredients
- 4 chicken breast fillets (approx. 120 g each)
- 1 garlic clove
- 1 tsp freshly grated ginger
- 2 tbsp vegetable oil
- 1 tbsp curry powder
- 300 ml chicken broth
- 200 ml coconut milk
- 150 g peas
- salt
- cayenne pepper
Instructions
- 1. Rinse the chicken breast fillets under cold water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Cut the chicken meat into large, bite-sized cubes.
- 4. Peel the garlic clove and chop it finely.
- 5. Heat oil in a large pan.
- 6. Fry the chicken cubes, the chopped garlic, and the grated ginger together in the hot oil until golden brown.
- 7. Stir the curry powder into the meat mixture.
- 8. Deglaze the mixture with the chicken broth.
- 9. Pour in the coconut milk.
- 10. Let the sauce simmer gently over low heat for about 10 minutes.
- 11. If the sauce becomes too thick, add a little more broth as needed.
- 12. Add the peas to the pan.
- 13. Let the peas cook for another 5 minutes.
- 14. Season the dish to taste with salt and cayenne pepper.
- 15. Serve the chicken warm.
