  1. 1. Preheat the oven to 200 degrees Celsius.
  2. 2. Wash the rosemary sprigs and shake them well to remove excess water.
  3. 3. Wash the garlic cloves and cut them into long, thin strips.
  4. 4. Carefully slide the garlic strips under the skin of the chicken thighs.
  5. 5. Season the chicken thighs with salt and pepper to taste.
  6. 6. Melt the butter in a small pot or in the microwave.
  7. 7. Stir the lemon juice into the melted butter.
  8. 8. Brush the chicken thighs thoroughly with the butter-lemon mixture.
  9. 9. Place the chicken thighs in a baking dish.
  10. 10. Tear off small pieces of the rosemary sprigs and tuck them into the chicken skin.
  11. 11. Slice the lemon into very thin rounds.
  12. 12. Place the lemon slices in the baking dish along with the chicken thighs.
  13. 13. Cut the spring onions in half lengthwise.
  14. 14. Add the spring onions to the baking dish as well.
  15. 15. Bake the chicken in the oven for about 60 minutes.
  16. 16. Remove the baking dish from the oven and plate the chicken.
  17. 17. Serve the chicken with the garlic-rosemary butter sauce.
