  1. 1. Whisk flour, a pinch of salt, an egg, milk, and sparkling water in a bowl until you have a smooth batter.
  2. 2. Let the batter rest for about 20 minutes.
  3. 3. Heat a pan with a little hot butter.
  4. 4. Bake 8 to 12 thin crepes one after another in the pan.
  5. 5. Preheat the oven to 180 degrees Celsius fan-forced.
  6. 6. Remove the skin from the chicken meat and cut the meat into small pieces.
  7. 7. Place the chicken meat into a bowl.
  8. 8. Mix the meat with crème fraîche.
  9. 9. Add lemon juice, salt, and pepper, and adjust the seasoning of the filling.
  10. 10. Place a portion of the filling in the center of each crepe.
  11. 11. Roll the crepes into small parcels.
  12. 12. Place the parcels on a baking tray lined with baking paper.
  13. 13. Brush the parcels with a little butter.
  14. 14. Bake the parcels in the oven for 4 to 5 minutes until they are warm.
  15. 15. Serve the parcels garnished with chives if desired.
