🍽️ Chicken in Crepe Parcels

Ingredients
- 200 g flour
- salt
- 2 eggs
- 350 ml milk
- 1 splash mineral water
- butter (for frying and brushing)
- 750 g cold chicken
- 4 tbsp crème fraîche
- 1 tbsp lemon juice
- pepper (from the mill)
- chives (to taste)
Instructions
- 1. Whisk flour, a pinch of salt, an egg, milk, and sparkling water in a bowl until you have a smooth batter.
- 2. Let the batter rest for about 20 minutes.
- 3. Heat a pan with a little hot butter.
- 4. Bake 8 to 12 thin crepes one after another in the pan.
- 5. Preheat the oven to 180 degrees Celsius fan-forced.
- 6. Remove the skin from the chicken meat and cut the meat into small pieces.
- 7. Place the chicken meat into a bowl.
- 8. Mix the meat with crème fraîche.
- 9. Add lemon juice, salt, and pepper, and adjust the seasoning of the filling.
- 10. Place a portion of the filling in the center of each crepe.
- 11. Roll the crepes into small parcels.
- 12. Place the parcels on a baking tray lined with baking paper.
- 13. Brush the parcels with a little butter.
- 14. Bake the parcels in the oven for 4 to 5 minutes until they are warm.
- 15. Serve the parcels garnished with chives if desired.
