🍽️ Thai-style Chicken Foil Packets with Lemongrass

Ingredients
- 1 stalk lemongrass
- 2 lime leaves
- 20 g ginger (1 piece)
- 1 garlic clove
- 175 g carrots (2 carrots)
- 250 g leek (1 stalk)
- 2 tsp olive oil
- 340 g chicken breast fillet (2 chicken breast fillets)
- salt
- pepper
- 0.5 lime
- 125 ml coconut water (Tetra-Pak)
- 4 sprigs cilantro
Instructions
- 1. Cut the lemongrass stalks in half crosswise.
- 2. Flatten the lemongrass pieces using the back of a knife to release the flavors.
- 3. Chop the lime leaves into coarse pieces.
- 4. Peel the ginger and the garlic.
- 5. Cut the ginger and garlic into thin strips.
- 6. Peel the carrots.
- 7. Slice the carrots into thin rounds.
- 8. Cut the leek in half crosswise.
- 9. Wash the leek thoroughly.
- 10. Cut the white parts of the leek into pieces about 2 centimeters wide.
- 11. Cut two pieces of aluminum foil, each measuring approximately 30 by 30 centimeters.
- 12. Spread one teaspoon of olive oil onto each piece of foil.
- 13. Wash the chicken breast fillets.
- 14. Pat the fillets dry with kitchen paper.
- 15. Place the chicken fillets onto the prepared foil pieces.
- 16. Season the chicken with salt and pepper.
- 17. Distribute the prepared vegetable and spice ingredients evenly over the chicken fillets.
- 18. Season the toppings lightly with salt and pepper as well.
- 19. Close the foil packets, but leave a small opening.
- 20. Squeeze the lime to extract the juice.
- 21. Mix two teaspoons of lime juice with the coconut water.
- 22. Pour the liquid into the packets through the small opening.
- 23. Seal the packets completely.
- 24. Place the packets onto a baking sheet.
- 25. Preheat the oven.
- 26. Bake the packets for approximately 30 minutes at 200 degrees Celsius conventional heat (or 180 degrees Celsius fan-forced, or gas mark 3).
- 27. Wash the coriander (cilantro).
- 28. Shake the coriander dry.
- 29. Pluck the coriander leaves from the stems.
- 30. Remove the packets from the oven.
- 31. Cut open the top of the packets.
- 32. Sprinkle the dish with the fresh coriander leaves.
- 33. Serve the chicken directly in the packets.
