🍽️ Crispy Chicken Fajitas

Ingredients
- 1 lime
- 350 g chicken breast fillet
- 1 garlic clove
- 4 tbsp corn germ oil
- 0.25 tsp chili powder
- salt
- 1 pinch ground coriander
- 1 pinch ground cumin
- 1 onion
- 1 green bell pepper
- 2 tomatoes
- 1 avocado
- 4 wheat tortillas
Instructions
- 1. Rinse the lime under hot water and pat it dry.
- 2. Cut the lime in half and squeeze out the juice.
- 3. Wash the chicken and pat it dry with a kitchen towel.
- 4. Cut the meat into thin strips.
- 5. Peel the garlic and press it through a garlic press.
- 6. Place the chicken in a bowl.
- 7. Add 2 tablespoons of oil, 2 tablespoons of lime juice, the garlic, chili, some salt, coriander, and cumin.
- 8. Mix everything well, cover the bowl, and let the marinade sit in the fridge for at least 30 minutes.
- 9. Peel the onion and slice it into rings.
- 10. Wash the bell pepper, remove the seeds, and slice it into strips.
- 11. Wash the tomatoes and remove the hard stem ends.
- 12. Cut the tomatoes into small cubes.
- 13. Cut the avocado in half and remove the pit.
- 14. Peel the skin and cut the flesh into cubes.
- 15. Mix the avocado cubes immediately with the remaining lime juice.
- 16. Heat the remaining oil in a pan.
- 17. Take the chicken out of the marinade and sear it for about 2 minutes.
- 18. Add the onion rings and pepper strips and cook for another 3 to 4 minutes.
- 19. Fold in the tomato cubes.
- 20. Warm the tortillas briefly in a dry pan over medium heat.
- 21. Spread the fajita filling onto the tortillas.
- 22. Place the avocado cubes on top.
- 23. Fold the tortillas and serve.
