  1. 1. Remove the bones and skin from the chicken meat. Cut the meat into small cubes.
  2. 2. Peel the onions and garlic. Wash the spring onions and trim the ends.
  3. 3. Cut the onions into thin strips. Finely chop the spring onions and garlic.
  4. 4. Heat oil in a large pan or pot.
  5. 5. Add the chicken cubes, onion strips, spring onions, and garlic to the hot pan.
  6. 6. Sauté the meat and vegetables for 2 to 3 minutes until lightly browned.
  7. 7. Stir turmeric, coriander root, ginger, and cumin into the meat and vegetable mixture.
  8. 8. Deglaze the mixture with the broth.
  9. 9. Add the coconut milk.
  10. 10. Let the curry simmer on low heat for about 30 minutes. Stir occasionally.
  11. 11. Add a little more broth if necessary, if the sauce becomes too thick.
  12. 12. Add the peas to the curry.
  13. 13. Let the curry cook for another 5 minutes.
  14. 14. Season the curry with salt and cayenne pepper to taste.
  15. 15. Garnish the dish with fresh coriander.
  16. 16. Serve the curry with the additional ingredients in small bowls on the table.
