🍽️ Chicken Pea Curry with Bananas

Ingredients
- 1 chicken (approx. 1 kg)
- 2 onions
- 4 spring onions
- 2 garlic cloves
- 2 tbsp vegetable oil
- 1 tbsp turmeric
- 1 tsp chopped coriander root
- 1 tsp freshly grated ginger
- 0.5 tsp ground cumin
- 250 ml chicken broth
- 200 ml coconut milk
- 200 g peas
- 2 banana slices
- 100 g coconut flakes
- 75 g roasted peanuts
- 75 g mango chutney
Instructions
- 1. Remove the bones and skin from the chicken meat. Cut the meat into small cubes.
- 2. Peel the onions and garlic. Wash the spring onions and trim the ends.
- 3. Cut the onions into thin strips. Finely chop the spring onions and garlic.
- 4. Heat oil in a large pan or pot.
- 5. Add the chicken cubes, onion strips, spring onions, and garlic to the hot pan.
- 6. Sauté the meat and vegetables for 2 to 3 minutes until lightly browned.
- 7. Stir turmeric, coriander root, ginger, and cumin into the meat and vegetable mixture.
- 8. Deglaze the mixture with the broth.
- 9. Add the coconut milk.
- 10. Let the curry simmer on low heat for about 30 minutes. Stir occasionally.
- 11. Add a little more broth if necessary, if the sauce becomes too thick.
- 12. Add the peas to the curry.
- 13. Let the curry cook for another 5 minutes.
- 14. Season the curry with salt and cayenne pepper to taste.
- 15. Garnish the dish with fresh coriander.
- 16. Serve the curry with the additional ingredients in small bowls on the table.
