🍲 Cozy Chicken Stew

Ingredients
- 900 g chicken drumsticks (3 chicken drumsticks)
- 2 bell peppers (1 red, 1 yellow)
- 3 onions
- 2 sprigs thyme
- 375 g plum tomatoes (5 plum tomatoes)
- 2 tbsp olive oil
- salt
- pepper
- 3 tbsp tomato paste
- 400 ml poultry broth
- 2 tbsp Worcestershire sauce
- 250 g corn (frozen)
Instructions
- 1. Rinse the chicken drumsticks under cold running water.
- 2. Pat the meat dry with a kitchen towel.
- 3. Peel the skin off the drumsticks.
- 4. Carefully separate the meat from the bones.
- 5. Cut the chicken meat into coarse cubes.
- 6. Cut the bell peppers into quarters.
- 7. Remove the seeds and white pith from the pepper pieces.
- 8. Rinse the deseeded pepper pieces.
- 9. Cut the peppers into approximately 1 cm cubes.
- 10. Peel the onions.
- 11. Cut the onions into cubes as well.
- 12. Rinse the thyme under cold water.
- 13. Shake the herb vigorously to remove excess water.
- 14. Pluck the small thyme leaves from the stems.
- 15. Finely chop the thyme leaves.
- 16. Wash the tomatoes thoroughly.
- 17. Cut out the hard stem areas from the tomatoes in a wedge shape.
- 18. Cut the cored tomatoes into cubes.
- 19. Pour the oil into a heavy pot.
- 20. Heat the oil over medium heat.
- 21. Add the pepper cubes to the pot.
- 22. Add the onion cubes as well.
- 23. Sauté the vegetables for 5 to 6 minutes.
- 24. Wait until the onions have turned a light brown color.
- 25. Add the chopped thyme to the pan.
- 26. Season the mixture with salt.
- 27. Season the mixture with black pepper.
- 28. Stir the tomato paste into the vegetables.
- 29. Sauté the tomato paste briefly to develop roasted flavors.
- 30. Add the chicken pieces to the pot.
- 31. Add the diced tomatoes.
- 32. Pour the broth over the meat and vegetables.
- 33. Add the Worcestershire sauce.
- 34. Bring the mixture to a boil.
- 35. Reduce the heat to low.
- 36. Place the lid on the pot.
- 37. Simmer the stew for 25 minutes.
- 38. Add the corn to the pot.
- 39. Bring the stew back to a boil.
- 40. Let the stew simmer for another 5 minutes.
- 41. Taste the finished stew and adjust with salt.
- 42. Taste the finished stew and adjust with black pepper.
