  1. 1. Peel the onion and cut it into fine cubes.
  2. 2. Heat one tablespoon of oil in a pot over medium heat.
  3. 3. Sauté the onion cubes until soft for two to three minutes.
  4. 4. Add the couscous to the pot.
  5. 5. Deglaze the mixture with hot broth.
  6. 6. Let the couscous swell for ten minutes over low heat with the lid closed.
  7. 7. Rinse the chicken breast fillets under cold water.
  8. 8. Pat the meat dry with a kitchen towel.
  9. 9. Season the chicken with salt and pepper.
  10. 10. Heat the remaining oil in a grill pan.
  11. 11. Grill the chicken breast over high heat for six to eight minutes on each side.
  12. 12. Wash the parsley and shake it dry.
  13. 13. Chop the parsley finely, but save a few leaves for decoration.
  14. 14. Wash the chili pepper and pat it dry.
  15. 15. Cut the chili pepper into thin rings.
  16. 16. Peel the avocados and halve them.
  17. 17. Remove the pits and cut the flesh into small pieces.
  18. 18. Mix the couscous mixture with the avocado pieces, olives, and chopped parsley.
  19. 19. Season the couscous to taste with lemon juice, salt, and pepper.
  20. 20. Divide the couscous among four plates.
  21. 21. Slice the grilled chicken into thin pieces.
  22. 22. Place the chicken slices on top of the couscous.
  23. 23. Garnish the dish with the chili rings and the remaining parsley leaves.
