🍽️ Couscous Bowl with Grilled Chicken and Avocado

Ingredients
- 1 red onion
- 2 tbsp olive oil
- 300 g couscous
- 600 ml vegetable broth (hot)
- 480 g chicken breast fillet (4 chicken breast fillets)
- salt
- pepper
- parsley
- 1 red chili pepper
- 2 avocados
- 50 g black olives
- 1 tbsp lemon juice
Instructions
- 1. Peel the onion and cut it into fine cubes.
- 2. Heat one tablespoon of oil in a pot over medium heat.
- 3. Sauté the onion cubes until soft for two to three minutes.
- 4. Add the couscous to the pot.
- 5. Deglaze the mixture with hot broth.
- 6. Let the couscous swell for ten minutes over low heat with the lid closed.
- 7. Rinse the chicken breast fillets under cold water.
- 8. Pat the meat dry with a kitchen towel.
- 9. Season the chicken with salt and pepper.
- 10. Heat the remaining oil in a grill pan.
- 11. Grill the chicken breast over high heat for six to eight minutes on each side.
- 12. Wash the parsley and shake it dry.
- 13. Chop the parsley finely, but save a few leaves for decoration.
- 14. Wash the chili pepper and pat it dry.
- 15. Cut the chili pepper into thin rings.
- 16. Peel the avocados and halve them.
- 17. Remove the pits and cut the flesh into small pieces.
- 18. Mix the couscous mixture with the avocado pieces, olives, and chopped parsley.
- 19. Season the couscous to taste with lemon juice, salt, and pepper.
- 20. Divide the couscous among four plates.
- 21. Slice the grilled chicken into thin pieces.
- 22. Place the chicken slices on top of the couscous.
- 23. Garnish the dish with the chili rings and the remaining parsley leaves.
