🍽️ Wok dish with chicken and broccoli

Ingredients
- 350 g broccoli
- salt
- 30 g walnut kernels
- 2 red onions
- 1 garlic clove
- 20 g ginger (1 piece; to taste)
- 250 g chicken breast fillet
- 2 tbsp soy sauce
- 1 level tsp cornstarch
- 2 tbsp oil
- 4 tbsp oyster sauce
- pepper
- 1 tsp sambal oelek (to taste)
Instructions
- 1. Remove the tough parts of the broccoli and wash it thoroughly. Let the vegetable drain. Divide the head into small florets.
- 2. Peel the broccoli stalks and cut them into approx. 1 cm cubes.
- 3. Bring a pot of salted water to a boil. Add the broccoli and cook for approx. 2 minutes (this is called blanching).
- 4. Drain the broccoli and rinse it immediately with cold water to stop the cooking process.
- 5. Let the broccoli drain well before using it further.
- 6. Chop the walnuts coarsely.
- 7. Peel the onions and cut them into fine cubes.
- 8. Peel the garlic and the ginger.
- 9. Finely chop the garlic and also finely grate the ginger.
- 10. Rinse the chicken breast and pat it dry with a kitchen towel.
- 11. Cut the chicken meat into fine cubes.
- 12. Put the chicken cubes into a small bowl.
- 13. Add soy sauce and cornstarch and mix everything well.
- 14. Heat the oil in a wok or a large frying pan.
- 15. Fry the meat over very high heat for 2 minutes.
- 16. Remove the meat from the pan and set it aside.
- 17. Add the onions and broccoli to the wok.
- 18. Fry the vegetables while stirring for approx. 2 minutes.
- 19. Add the walnuts, garlic, and ginger.
- 20. Fry everything for 1 more minute while stirring occasionally.
- 21. Mix the oyster sauce with 4 tablespoons of water.
- 22. Pour the sauce over the vegetables and bring it to a boil.
- 23. Add the chicken meat back into the pan.
- 24. Turn everything well and continue cooking for approx. 2 minutes.
- 25. Season the dish to taste with salt and pepper.
- 26. If you like it spicy, stir in some sambal oelek.
- 27. Serve the dish with rice.
