  1. 1. Remove the tough parts of the broccoli and wash it thoroughly. Let the vegetable drain. Divide the head into small florets.
  2. 2. Peel the broccoli stalks and cut them into approx. 1 cm cubes.
  3. 3. Bring a pot of salted water to a boil. Add the broccoli and cook for approx. 2 minutes (this is called blanching).
  4. 4. Drain the broccoli and rinse it immediately with cold water to stop the cooking process.
  5. 5. Let the broccoli drain well before using it further.
  6. 6. Chop the walnuts coarsely.
  7. 7. Peel the onions and cut them into fine cubes.
  8. 8. Peel the garlic and the ginger.
  9. 9. Finely chop the garlic and also finely grate the ginger.
  10. 10. Rinse the chicken breast and pat it dry with a kitchen towel.
  11. 11. Cut the chicken meat into fine cubes.
  12. 12. Put the chicken cubes into a small bowl.
  13. 13. Add soy sauce and cornstarch and mix everything well.
  14. 14. Heat the oil in a wok or a large frying pan.
  15. 15. Fry the meat over very high heat for 2 minutes.
  16. 16. Remove the meat from the pan and set it aside.
  17. 17. Add the onions and broccoli to the wok.
  18. 18. Fry the vegetables while stirring for approx. 2 minutes.
  19. 19. Add the walnuts, garlic, and ginger.
  20. 20. Fry everything for 1 more minute while stirring occasionally.
  21. 21. Mix the oyster sauce with 4 tablespoons of water.
  22. 22. Pour the sauce over the vegetables and bring it to a boil.
  23. 23. Add the chicken meat back into the pan.
  24. 24. Turn everything well and continue cooking for approx. 2 minutes.
  25. 25. Season the dish to taste with salt and pepper.
  26. 26. If you like it spicy, stir in some sambal oelek.
  27. 27. Serve the dish with rice.
