  1. 1. Wash the chicken drumsticks thoroughly and pat them dry with a kitchen towel.
  2. 2. Mix allspice, cinnamon, curry powder, nutmeg, and ginger in a small bowl.
  3. 3. Grind the peppercorns and cumin seeds finely in a mortar.
  4. 4. Wash the orange and lime under hot water, dry them, and finely grate the zest.
  5. 5. Cut the fruits in half and squeeze out the juice.
  6. 6. Peel the garlic and press it into the spice mixture.
  7. 7. Add pepper, cumin, half of the citrus zest, 2 tablespoons of citrus juice, and 2 tablespoons of oil.
  8. 8. Stir everything together until you have a smooth marinade paste.
  9. 9. Coat the chicken drumsticks thoroughly with the paste.
  10. 10. Cover the meat and refrigerate it overnight to marinate.
  11. 11. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  12. 12. Grease a roasting pan with a little oil.
  13. 13. Peel the onions and slice them into thin strips.
  14. 14. Mix the onions with the raisins and half of the almonds.
  15. 15. Place the onion mixture into the prepared roasting pan.
  16. 16. Season the marinated chicken drumsticks with salt and cayenne pepper.
  17. 17. Place the chicken drumsticks on top of the vegetables in the pan.
  18. 18. Roast the chicken in the preheated oven at 200 degrees for about 45 minutes.
  19. 19. After 20 minutes, pour half of the wine over the chicken.
  20. 20. Add the remaining citrus juice and the remaining citrus zest.
  21. 21. Turn the chicken drumsticks over once.
  22. 22. Turn the chicken drumsticks over again after another 20 minutes.
  23. 23. Pour the remaining oil and the remaining wine over the chicken.
