🍽️ Arabian-style Chicken Drumsticks with Almonds, Raisins, and Onions

Ingredients
- 8 small chicken drumsticks
- 1 pinch ground clove
- 1 tsp. allspice
- 0.25 tsp. cinnamon
- 1 tsp. curry powder
- 1 tsp. nutmeg
- 1 tsp. finely grated ginger
- 1 tsp. peppercorns
- 0.5 tsp. cumin
- 1 untreated orange
- 1 lime
- 1 garlic clove
- 5 tbsp. sesame oil
- salt
- cayenne pepper
- 2 onions
- 75 g raisins
- 50 g sliced almonds
- 250 ml white wine or poultry stock (glass)
Instructions
- 1. Wash the chicken drumsticks thoroughly and pat them dry with a kitchen towel.
- 2. Mix allspice, cinnamon, curry powder, nutmeg, and ginger in a small bowl.
- 3. Grind the peppercorns and cumin seeds finely in a mortar.
- 4. Wash the orange and lime under hot water, dry them, and finely grate the zest.
- 5. Cut the fruits in half and squeeze out the juice.
- 6. Peel the garlic and press it into the spice mixture.
- 7. Add pepper, cumin, half of the citrus zest, 2 tablespoons of citrus juice, and 2 tablespoons of oil.
- 8. Stir everything together until you have a smooth marinade paste.
- 9. Coat the chicken drumsticks thoroughly with the paste.
- 10. Cover the meat and refrigerate it overnight to marinate.
- 11. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 12. Grease a roasting pan with a little oil.
- 13. Peel the onions and slice them into thin strips.
- 14. Mix the onions with the raisins and half of the almonds.
- 15. Place the onion mixture into the prepared roasting pan.
- 16. Season the marinated chicken drumsticks with salt and cayenne pepper.
- 17. Place the chicken drumsticks on top of the vegetables in the pan.
- 18. Roast the chicken in the preheated oven at 200 degrees for about 45 minutes.
- 19. After 20 minutes, pour half of the wine over the chicken.
- 20. Add the remaining citrus juice and the remaining citrus zest.
- 21. Turn the chicken drumsticks over once.
- 22. Turn the chicken drumsticks over again after another 20 minutes.
- 23. Pour the remaining oil and the remaining wine over the chicken.
