🍽️ Meat Skewers with Garlic-Yogurt Dip

Ingredients
- 200 g shallots
- 400 g zucchini
- 0.5 stale roll
- 0.5 medium-hot mustard
- salt
- pepper
- 250 g beef tartare
- 1 bunch flat-leaf parsley
- 2 tbsp oil
- 1 egg yolk
- 1 tsp lemon juice
- 1 tbsp vinegar
- salt
- 0.125 l olive oil
- 4 whole milk yogurt
- 4 garlic cloves
- salt
- pepper
- grated lemon zest
Instructions
- 1. Peel the onions and slice the washed zucchini into rounds about 1 cm thick. Soak the bread rolls in lukewarm water and then squeeze them out well.
- 2. Add the mustard to the minced meat and mix everything into a uniform dough. Season with salt and pepper, then stir in half a bunch of chopped parsley.
- 3. Form 12 to 16 small balls from the meat mixture and skewer these
- 4. alternately onto 4 skewers together with the onions, the zucchini slices, and the parsley leaves.
- 5. Heat the oil in a pan, brown the skewers all around, and then let them cook covered for 5 to 10 minutes.
- 6. Whisk the egg yolk, lemon juice, vinegar, and salt until frothy for the sauce. Then slowly drizzle in the olive oil, add the yogurt at the end, and stir smoothly with the pressed garlic cloves.
- 7. Sprinkle the skewers with lemon zest and serve them together with the sauce.
- 8. Serve with baguette or rustic bread.
