  2. 2. Wash a cucumber, peel if desired, halve lengthwise, remove seeds, and grate finely.
  3. 3. Whisk quark and yogurt together in a bowl.
  4. 4. Fold in the chopped garlic, fresh dill, and grated cucumber into the quark mixture.
  5. 5. Season the dip with salt, pepper, and lemon juice.
  6. 6. Cover the tzatziki and refrigerate to let the flavors meld.
  7. 7. Peel a shallot and the remaining garlic cloves, then chop finely.
  8. 8. Heat one tablespoon of hot oil in a pan.
  9. 9. Sauté the shallot and garlic in the oil until translucent.
  10. 10. Remove the pan from the heat and let the mixture cool down.
  11. 11. Dip a bread roll in lukewarm water to soften it.
  12. 12. Squeeze the soft bread roll thoroughly to remove excess moisture.
  13. 13. Combine minced meat, the cooled shallot mixture, an egg, mustard, and the squeezed bread roll in a bowl.
  14. 14. Knead the meat mixture vigorously until it is homogeneous.
  15. 15. Season the mixture with salt and pepper.
  16. 16. Form small balls from the minced meat mixture.
  17. 17. Heat ghee (clarified butter) in a pan.
  18. 18. Fry the meatballs in the hot ghee until golden brown on all sides.
  19. 19. Wash an apple, cut it into quarters, and remove the core.
  20. 20. Cut the apple quarters into thin strips.
  21. 21. Add the apple strips to the meatballs in the pan and sauté briefly.
  22. 22. Wash tomatoes and remove the hard stem area.
  23. 23. Cut the tomatoes into wedges.
  24. 24. Crumble feta cheese into small pieces using your fingers.
  25. 25. Arrange the meatballs with the apple strips on plates.
  26. 26. Serve the prepared tzatziki alongside the meatballs.
  27. 27. Arrange the tomato wedges on the plate.
  28. 28. Garnish the dish with fresh parsley and the feta crumbs.
  29. 29. Serve with flatbread (pita) on the side if desired.
