🍽️ Crispy Meatballs with Tomato, Flatbread and Yogurt Dip

Ingredients
- 3 garlic cloves
- 200 g cucumber
- 250 g low-fat quark
- 250 g plain yogurt
- 1 tsp fresh chopped dill
- salt
- pepper (from the mill)
- 1 dash lemon juice
- 1 shallot
- 1 tbsp olive oil
- 1 day-old roll
- 600 g mixed minced meat
- 1 egg
- 1 tsp medium-hot mustard
- 20 g ghee
- 1 apple
- 6 tomatoes
- 150 g feta
- 2 tbsp fresh chopped parsley
- flatbread (to taste)
Instructions
- 1. Peel two garlic cloves and chop them very finely.
- 2. Wash a cucumber, peel if desired, halve lengthwise, remove seeds, and grate finely.
- 3. Whisk quark and yogurt together in a bowl.
- 4. Fold in the chopped garlic, fresh dill, and grated cucumber into the quark mixture.
- 5. Season the dip with salt, pepper, and lemon juice.
- 6. Cover the tzatziki and refrigerate to let the flavors meld.
- 7. Peel a shallot and the remaining garlic cloves, then chop finely.
- 8. Heat one tablespoon of hot oil in a pan.
- 9. Sauté the shallot and garlic in the oil until translucent.
- 10. Remove the pan from the heat and let the mixture cool down.
- 11. Dip a bread roll in lukewarm water to soften it.
- 12. Squeeze the soft bread roll thoroughly to remove excess moisture.
- 13. Combine minced meat, the cooled shallot mixture, an egg, mustard, and the squeezed bread roll in a bowl.
- 14. Knead the meat mixture vigorously until it is homogeneous.
- 15. Season the mixture with salt and pepper.
- 16. Form small balls from the minced meat mixture.
- 17. Heat ghee (clarified butter) in a pan.
- 18. Fry the meatballs in the hot ghee until golden brown on all sides.
- 19. Wash an apple, cut it into quarters, and remove the core.
- 20. Cut the apple quarters into thin strips.
- 21. Add the apple strips to the meatballs in the pan and sauté briefly.
- 22. Wash tomatoes and remove the hard stem area.
- 23. Cut the tomatoes into wedges.
- 24. Crumble feta cheese into small pieces using your fingers.
- 25. Arrange the meatballs with the apple strips on plates.
- 26. Serve the prepared tzatziki alongside the meatballs.
- 27. Arrange the tomato wedges on the plate.
- 28. Garnish the dish with fresh parsley and the feta crumbs.
- 29. Serve with flatbread (pita) on the side if desired.
