🍽️ Potato-Stuffed Meatballs

Ingredients
- 300 g ground beef
- 200 g veal mince
- 2 eggs
- 50 g breadcrumbs
- 1 bunch parsley
- 750 g potatoes
- 3 egg yolks
- 100 g flour
- 2 tbsp ghee
- salt
- pepper
Instructions
- 1. Put the beef mince, the veal mince, the eggs, and the breadcrumbs into a large bowl.
- 2. Wash the parsley and chop it finely.
- 3. Add the parsley, salt, and pepper to the meat mixture.
- 4. Mix everything well with your hands.
- 5. Boil the potatoes in their skin.
- 6. Let the potatoes cool down briefly.
- 7. Peel the potatoes.
- 8. Press the potatoes through a potato masher.
- 9. Knead the egg yolk and the flour into a dough.
- 10. Season the potato dough with salt and pepper.
- 11. Shape the meat mixture into a long roll.
- 12. Wrap the meat roll completely with the potato dough.
- 13. Wrap the package in plastic wrap.
- 14. Put the package in the refrigerator for 1 hour.
- 15. Cut the package into slices about the thickness of a finger.
- 16. Lightly coat the slices in flour.
- 17. Fry the slices in hot clarified butter until golden brown.
