🍽️ Meat Skewers with Braised Cucumbers

Ingredients
- 800 g cucumber
- 1 shallot
- 1 tbsp butter
- 250 ml vegetable broth
- salt
- pepper (from the mill)
- 100 g cream cheese
- 1 tsp hot mustard
- lemon juice
- 1 roll (from the previous day)
- 3 tbsp whipping cream
- 600 g mixed minced meat
- 1 egg
- 1 tbsp freshly chopped parsley
- a pinch lemon zest
- salt
- pepper (from the mill)
- oil (for frying)
- chopped dill (for garnish)
Instructions
- 1. Peel the cucumbers and cut them in half lengthwise.
- 2. Scoop out the seeds from the cucumber halves with a spoon.
- 3. Cut the cucumber flesh into small pieces.
- 4. Peel the shallot and chop it finely.
- 5. Sauté the shallot in hot butter until translucent.
- 6. Add the cucumber pieces to the shallot and mix well.
- 7. Deglaze the mixture with the broth.
- 8. Season with salt and pepper.
- 9. Simmer the vegetables on low heat for 15 to 20 minutes.
- 10. Add more broth if necessary to prevent drying out.
- 11. Soak the bread roll in water.
- 12. Squeeze the soaked bread roll thoroughly.
- 13. Place the minced meat, egg, parsley, squeezed bread, and lemon zest in a bowl.
- 14. Season the meat mixture with salt and pepper.
- 15. Knead the ingredients well until they form a homogeneous mass.
- 16. Shape the meat mixture into small sausages or skewers.
- 17. Fry the skewers in hot oil in a non-stick pan until golden brown.
- 18. Turn the skewers regularly while frying.
- 19. Fry the skewers for about 5 to 6 minutes.
- 20. Lift the braised cucumbers out of the sauce with a slotted spoon.
- 21. Arrange the cucumbers on plates.
- 22. Reduce the cooking sauce further if necessary to thicken it.
- 23. Stir the cream cheese and mustard into the sauce.
- 24. Season the sauce with lemon juice, salt, and pepper.
- 25. Arrange the skewers together with the vegetables on the plates.
- 26. Sprinkle the skewers with fresh dill and serve.
