🥗 Meatball Skewers with Salad

Ingredients
- 1 cucumber
- 1 red bell pepper
- 1 yellow bell pepper
- 1 green bell pepper
- 200 g cherry tomatoes
- 50 g green olives (pitted)
- 4 tbsp olive oil
- 3 tbsp lemon juice
- oregano (for garnish)
- 2 shallots
- 500 g ground beef
- 1 tbsp finely chopped mint
- 1 egg yolk
- 1 pinch grated lemon zest
- 2 tbsp freshly grated white bread
- 1 tsp Pul Biber (dried pepper flakes, mild or hot; Turkish grocery store)
- salt
- pepper (from the mill)
- 3 tbsp olive oil
Instructions
- 1. Peel the shallots and chop them very finely.
- 2. Place the minced meat, the chopped shallots, the mint, the egg yolk, the lemon zest, the grated white bread, Pul Biber, salt and pepper in a bowl.
- 3. Knead all ingredients into a homogeneous minced meat dough.
- 4. Form about 20 small balls from the dough.
- 5. Thread the meatballs onto wooden skewers.
- 6. Heat oil in a pan.
- 7. Fry the skewers in the hot oil on all sides for 4 to 5 minutes until golden brown.
- 8. Wash the cucumber and cut off the ends.
- 9. Cut the cucumber lengthwise into quarters and then into pieces.
- 10. Wash the bell peppers, halve them, remove the core and cut them into strips.
- 11. Wash the tomatoes, remove the stem if necessary and slice them.
- 12. Mix the vegetables with the olives.
- 13. Distribute the salad onto bowls.
- 14. Drizzle the salad with olive oil and lemon juice.
- 15. Place the meat skewers on the salad.
- 16. Sprinkle the dish with oregano leaves and serve.
