🍽️ Grilled Meat Skewers with Zucchini

Ingredients
- 500 g beef mince
- 1 stale roll
- 1 tbsp chopped shallots
- 1 clove garlic (pressed)
- 1 egg yolk
- salt
- pepper (from the mill)
- 1 tbsp parsley (finely chopped)
- oil
- 2 zucchini
- 1 tbsp lemon juice
- 1 tbsp oil
- 1 tbsp parsley (finely chopped)
- 2 red onions
- 250 g sour yogurt
- 2 mango chutney
- salt
- pepper (from the mill)
- 4 tbsp red currant jelly
- 125 ml ketchup
- red currants (for garnish)
Instructions
- 1. Peel the onions and cut them into small cubes.
- 2. Mix the yogurt with the chutney in a bowl.
- 3. Set aside the onion cubes.
- 4. Soak the bread rolls in some water.
- 5. Squeeze the soaked bread roll well to remove excess water.
- 6. Finely chop the shallot and the garlic.
- 7. Heat oil in a pan and sauté the shallot and garlic until translucent.
- 8. Remove the pan from the heat.
- 9. Add the squeezed bread roll and the remaining ingredients for the meat mixture.
- 10. Knead everything into a homogeneous meat mixture.
- 11. Form small balls from the meat mixture.
- 12. Wash the zucchini thoroughly.
- 13. Remove the hard ends of the zucchini.
- 14. Cut the zucchini into finger-thick slices.
- 15. Mix lemon juice, oil, parsley, salt, and pepper in a bowl.
- 16. Toss the zucchini slices with the marinade.
- 17. Thread meatballs and zucchini slices alternately onto the skewers.
- 18. Brush the skewers with some oil.
- 19. Preheat the grill.
- 20. Grill the skewers under the hot grill until golden brown on all sides.
- 21. Warm the redcurrant jelly in a small pot.
- 22. Mix the warmed jelly with the ketchup.
- 23. Garnish the skewers with fresh redcurrants if desired.
