  1. 1. Grease the indentations of the muffin tin with butter.
  2. 2. Fry the minced meat in clarified butter while stirring constantly until it breaks into small crumbs.
  3. 3. Peel the shallot and chop it finely.
  4. 4. Peel the garlic.
  5. 5. Mix the flour with the spices, the pistachios, the fried minced meat, the shallot, the baking powder, and the baking soda.
  6. 6. Press the garlic into the dry mixture and stir everything well.
  7. 7. Lightly beat the egg in a large bowl.
  8. 8. Add the oil and the buttermilk to the egg mixture and whisk everything well together.
  9. 9. Add the flour mixture to the liquid egg mixture.
  10. 10. Stir only until the dry ingredients are just moist.
  11. 11. Distribute the batter evenly into the indentations of the tin.
  12. 12. Sprinkle each muffin with some chopped pistachios.
  13. 13. Preheat the oven to 180 degrees and place the tray in the center.
  14. 14. Bake the muffins for about 20 to 25 minutes.
  15. 15. Let the muffins rest for 5 minutes in the hot tray.
  16. 16. Remove the muffins and serve them immediately.
