🍰 Savory Meat Muffins

Ingredients
- 150 g beef minced meat
- 1 tbsp clarified butter
- 280 g flour
- 0.5 tsp salt
- 0.5 tsp paprika powder (sweet)
- 2 tbsp chopped pistachios
- 1 shallot
- 1 clove garlic
- 2.5 tsp baking powder
- 0.5 tsp baking soda
- 1 egg
- 50 ml vegetable oil
- 300 g buttermilk
- 40 g chopped pistachios
- 1 muffin baking tray (with 12 indentations)
- butter (for the baking pan)
Instructions
- 1. Grease the indentations of the muffin tin with butter.
- 2. Fry the minced meat in clarified butter while stirring constantly until it breaks into small crumbs.
- 3. Peel the shallot and chop it finely.
- 4. Peel the garlic.
- 5. Mix the flour with the spices, the pistachios, the fried minced meat, the shallot, the baking powder, and the baking soda.
- 6. Press the garlic into the dry mixture and stir everything well.
- 7. Lightly beat the egg in a large bowl.
- 8. Add the oil and the buttermilk to the egg mixture and whisk everything well together.
- 9. Add the flour mixture to the liquid egg mixture.
- 10. Stir only until the dry ingredients are just moist.
- 11. Distribute the batter evenly into the indentations of the tin.
- 12. Sprinkle each muffin with some chopped pistachios.
- 13. Preheat the oven to 180 degrees and place the tray in the center.
- 14. Bake the muffins for about 20 to 25 minutes.
- 15. Let the muffins rest for 5 minutes in the hot tray.
- 16. Remove the muffins and serve them immediately.
