🍝 Spicy Pumpkin and Minced Meat Soup with Noodles

Ingredients
- 400 g Hokkaido pumpkin
- 1 tbsp oil
- 400 g beef mince
- salt
- pepper (from the mill)
- 2 tsp curry powder
- 500 ml vegetable broth
- 200 ml orange juice
- 200 ml whipping cream
- 350 g fork spaghetti
- soy sauce
- cayenne pepper
Instructions
- 1. Thoroughly wash the pumpkin under running water.
- 2. Cut the washed pumpkin, including the skin, into cubes of approx. 2x2 cm.
- 3. Heat the oil in a large pot.
- 4. Add the minced meat to the pot and fry it until crumbly.
- 5. Season the meat generously with salt and pepper.
- 6. Add the pumpkin cubes and sauté everything for 2 minutes.
- 7. Sprinkle the curry powder over the mixture.
- 8. Deglaze the mixture with vegetable broth, orange juice, and cream.
- 9. Bring the soup to a boil.
- 10. Add the noodles to the boiling soup.
- 11. Cook the noodles until tender, stirring occasionally.
- 12. Season the finished soup with soy sauce and cayenne pepper.
- 13. Serve the soup hot.
