  1. 1. Remove the outer leaves of the savoy cabbage and cut out the hard core in the center.
  2. 2. Place the whole cabbage head in boiling salted water for two to three minutes.
  3. 3. Take the cabbage out and carefully separate the outer, soft leaves.
  4. 4. Shock the separated leaves immediately with cold water to keep them fresh.
  5. 5. Blanch the remaining cabbage head again until all leaves are easily removable.
  6. 6. Let the leaves drain well and flatten the thick central ribs so they fold more easily.
  7. 7. Soak the bread roll in some water.
  8. 8. Peel the onion and the garlic clove and chop both finely.
  9. 9. Heat the oil in a small pan.
  10. 10. Sauté the onions and garlic until translucent.
  11. 11. Squeeze the soaked bread roll well.
  12. 12. Mix the bread roll in a bowl with the egg, the sautéed onions, the garlic, the parsley, and the minced meat.
  13. 13. Season the filling generously with salt, pepper, cayenne pepper, and paprika powder.
  14. 14. Lay the cabbage leaves in an overlapping pattern on the work surface to form a rectangle of approx. 25 x 25 cm.
  15. 15. Sprinkle the leaves with salt, pepper, and grated nutmeg.
  16. 16. Shape the minced meat mixture into a large ball.
  17. 17. Place the meat ball in the center of the cabbage leaves.
  18. 18. Fold the leaves over the meat ball on all sides so that it is completely enclosed.
  19. 19. Wrap the stuffed cabbage tightly with kitchen twine.
  20. 20. Preheat the oven to 220 degrees.
  21. 21. Heat some butter in a frying pan.
  22. 22. Sear the cabbage on all sides.
  23. 23. Deglaze the meat with meat broth.
  24. 24. Cook the cabbage in the oven for 40 to 45 minutes.
  25. 25. Baste the cabbage with the meat broth from time to time.
  26. 26. Serve the rolls with boiled potatoes.
