🍽️ Cabbage Rolls with Minced Meat Filling

Ingredients
- 1 medium savoy cabbage
- 1 day-old roll
- 2 shallots
- 1 clove of garlic
- 2 tbsp oil
- 300 g minced meat
- 1 egg
- 2 tbsp finely chopped parsley
- salt
- freshly ground pepper
- sweet paprika powder
- cayenne pepper
- 2 tbsp butter
- 0.5 cup whipping cream
- 0.25 l meat broth
- 400 g potatoes
- water (salt)
Instructions
- 1. Remove the outer leaves of the savoy cabbage and cut out the hard core in the center.
- 2. Place the whole cabbage head in boiling salted water for two to three minutes.
- 3. Take the cabbage out and carefully separate the outer, soft leaves.
- 4. Shock the separated leaves immediately with cold water to keep them fresh.
- 5. Blanch the remaining cabbage head again until all leaves are easily removable.
- 6. Let the leaves drain well and flatten the thick central ribs so they fold more easily.
- 7. Soak the bread roll in some water.
- 8. Peel the onion and the garlic clove and chop both finely.
- 9. Heat the oil in a small pan.
- 10. Sauté the onions and garlic until translucent.
- 11. Squeeze the soaked bread roll well.
- 12. Mix the bread roll in a bowl with the egg, the sautéed onions, the garlic, the parsley, and the minced meat.
- 13. Season the filling generously with salt, pepper, cayenne pepper, and paprika powder.
- 14. Lay the cabbage leaves in an overlapping pattern on the work surface to form a rectangle of approx. 25 x 25 cm.
- 15. Sprinkle the leaves with salt, pepper, and grated nutmeg.
- 16. Shape the minced meat mixture into a large ball.
- 17. Place the meat ball in the center of the cabbage leaves.
- 18. Fold the leaves over the meat ball on all sides so that it is completely enclosed.
- 19. Wrap the stuffed cabbage tightly with kitchen twine.
- 20. Preheat the oven to 220 degrees.
- 21. Heat some butter in a frying pan.
- 22. Sear the cabbage on all sides.
- 23. Deglaze the meat with meat broth.
- 24. Cook the cabbage in the oven for 40 to 45 minutes.
- 25. Baste the cabbage with the meat broth from time to time.
- 26. Serve the rolls with boiled potatoes.
