🍲 Spicy Minced Meat and Bean Stew with Green Pepper

Ingredients
- 750 g beef mince
- 2 onions
- 3 garlic cloves
- 2 stalks celery
- 1 red chili pepper (to taste)
- 6 tbsp oil
- 500 ml meat broth
- 400 g kidney beans (can), drained
- 4 green bell peppers
- 0.5 tsp cumin (ground)
- salt
- pepper (from the mill)
- 2 tbsp parsley (chopped)
Instructions
- 1. Peel the onions and garlic. Dice both ingredients very finely.
- 2. Remove the stems and seeds from the chili peppers. Finely chop the chili.
- 3. Wash the celery and chop it into small pieces.
- 4. Wash the green bell peppers. Cut them in half lengthwise, remove the seeds and the white inner membrane. Dice the flesh.
- 5. Heat some oil in a very large pan.
- 6. Fry the minced meat in portions until it is crumbly.
- 7. Return all the fried meat to the pan along with the remaining oil.
- 8. Pour in 200 to 300 milliliters of broth.
- 9. Simmer the meat over medium heat for 10 to 20 minutes until the liquid has almost completely evaporated.
- 10. Add the diced pepper, onions, chili, garlic, and celery to the pan.
- 11. Sauté the vegetables briefly while stirring.
- 12. Pour the remaining broth into the pan.
- 13. Cover the pan and let the stew simmer on low heat for about 30 minutes.
- 14. Add the kidney beans to the stew.
- 15. Season the dish to taste with salt, pepper, and cumin.
- 16. Let the stew simmer for another 15 minutes.
