🍽️ Juicy Meatloaf with Spinach Filling

Ingredients
- 150 g fresh spinach leaves
- salt
- 2 stale rolls
- 4 tbsp olive oil
- 2 garlic cloves
- 1 red chili pepper
- 80 g feta
- 50 g pine nuts
- pepper (from the mill)
- 1 kg ground beef
- 2 tsp medium-hot mustard
- 2 eggs
- 0.5 tsp dried oregano
- 1 tbsp semolina
- 1 sprig rosemary
Instructions
- 1. Preheat the oven to 200 degrees Celsius using top and bottom heat.
- 2. Wash the spinach thoroughly.
- 3. Remove any wilted or damaged leaves.
- 4. Bring water to a boil and add some salt.
- 5. Add the spinach to the boiling water.
- 6. Cook the spinach until it has wilted.
- 7. Remove the spinach from the water.
- 8. Drain the spinach.
- 9. Shock the spinach under cold water.
- 10. Squeeze the spinach well to remove excess liquid.
- 11. Chop the spinach roughly.
- 12. Crush the bread rolls.
- 13. Soak the bread rolls in lukewarm water.
- 14. Take 1 to 2 tablespoons of olive oil.
- 15. Brush a high baking sheet or a large baking dish with it.
- 16. Peel the garlic.
- 17. Chop the garlic finely.
- 18. Chop the chili finely.
- 19. Mix the chopped garlic and chili together.
- 20. Crumble the feta.
- 21. Take a non-stick pan.
- 22. Toast the pine nuts without fat in the pan.
- 23. Place the toasted pine nuts in a bowl.
- 24. Add the chopped spinach to the pine nuts.
- 25. Add the feta to the mixture.
- 26. Add the chili-garlic mixture.
- 27. Mix all ingredients well.
- 28. Season the filling with salt.
- 29. Season the filling with pepper.
- 30. Squeeze the soaked bread rolls well.
- 31. Take the minced meat.
- 32. Add the squeezed bread to the minced meat.
- 33. Add the mustard.
- 34. Add the eggs.
- 35. Add the oregano.
- 36. Mix the meat mixture thoroughly.
- 37. Season the meat mixture with salt.
- 38. Season the meat mixture with pepper.
- 39. Take two-thirds of the meat mixture.
- 40. Shape it into a loaf-like form.
- 41. Press an indentation into the center of the loaf.
- 42. Fill the spinach mixture into the indentation.
- 43. Take the remaining meat mixture.
- 44. Cover the filling with the remaining meat mixture.
- 45. Place the meatloaf in the greased dish.
- 46. Sprinkle the loaf with semolina.
- 47. Bake the loaf for about 60 minutes in the preheated oven.
- 48. Remove the loaf from the oven.
- 49. Place the loaf on a preheated platter.
- 50. Garnish the loaf with a sprig of rosemary.
- 51. Serve the loaf with a Mediterranean salad if desired.
