🍽️ Juicy Meatloaf with Creamy Mashed Potatoes

Ingredients
- 800 g Beef
- 100 g Bacon cubes
- 100 g Emmental (diced)
- 2 Rolls
- 2 Eggs
- 2 tbsp Parsley
- 2 tbsp Rice
- 1 Onion
- Pepper (2 red and 2 yellow each)
- Salt
- Pepper
- Oil (for the pan)
- Parsley (for garnishing)
Instructions
- 1. Take the bread rolls and soak them briefly in a little water.
- 2. Squeeze the rolls firmly until no more water comes out.
- 3. Put the minced meat into a large bowl.
- 4. Add the squeezed bread rolls.
- 5. Add the bacon cubes to the bowl.
- 6. Add the cheese pieces to the bowl.
- 7. Crack the eggs into the bowl.
- 8. Add the parsley to the bowl.
- 9. Add the rice to the bowl.
- 10. Dice the onion into small cubes.
- 11. Dice the red bell pepper into small cubes.
- 12. Dice the yellow bell pepper into small cubes.
- 13. Add all the pepper and onion cubes to the bowl.
- 14. Season the mixture with salt.
- 15. Season the mixture with pepper.
- 16. Knead all ingredients by hand until you have a uniform dough.
- 17. Wet your hands with a little water.
- 18. Shape the meat mixture into a long loaf.
- 19. Brush a baking dish thinly with oil.
- 20. Place the meat loaf into the prepared dish.
- 21. Preheat the oven to 180 degrees.
- 22. Place the loaf in the preheated oven.
- 23. Cut the remaining bell peppers into wide strips.
- 24. Bake the loaf for 30 minutes.
- 25. Remove the loaf from the oven briefly after 30 minutes.
- 26. Distribute the pepper strips evenly over the loaf.
- 27. Place the loaf back in the oven.
- 28. Bake the loaf for another 20 to 30 minutes.
- 29. Remove the finished loaf from the oven.
- 30. Strip fresh parsley from the stems.
- 31. Spread the parsley leaves over the loaf.
- 32. Serve the loaf hot with mashed potatoes.
