  1. 1. Pick the leaves off the fresh coriander.
  2. 2. Set aside a few coriander leaves for garnish.
  3. 3. Finely chop the remaining coriander.
  4. 4. Thoroughly wash the chili pepper.
  5. 5. Cut the chili pepper in half lengthwise.
  6. 6. Remove the seeds from the chili pepper.
  7. 7. Finely chop the deseeded chili pepper.
  8. 8. Peel the garlic clove.
  9. 9. Finely chop the garlic as well.
  10. 10. Place the minced meat into a large bowl.
  11. 11. Add the finely chopped coriander to the minced meat.
  12. 12. Add the finely chopped chili to the minced meat.
  13. 13. Add the finely chopped ginger to the minced meat.
  14. 14. Add the finely chopped garlic to the minced meat.
  15. 15. Crack the egg into the meat mixture.
  16. 16. Add breadcrumbs gradually.
  17. 17. Mix everything well until the dough is moldable.
  18. 18. Season the mixture with soy sauce.
  19. 19. Season the mixture with cayenne pepper.
  20. 20. Form small balls from the meat mixture.
  21. 21. Thread the meatballs onto the lemongrass skewers.
  22. 22. Brush the skewers with olive oil.
  23. 23. Grill or fry the skewers for approx. 5 to 6 minutes.
  24. 24. Turn the skewers while cooking.
  25. 25. Garnish the finished skewers with the reserved coriander leaves.
  26. 26. Serve the skewers immediately.
