🍽️ Meatball Skewers with Lemongrass

Ingredients
- 800 g mixed ground meat
- 0.5 bunch cilantro
- 1 chili pepper
- 1 tsp ginger (freshly grated)
- 1 clove garlic
- 1 egg
- breadcrumbs
- soy sauce
- cayenne pepper
- olive oil
- 8 stalks lemongrass
Instructions
- 1. Pick the leaves off the fresh coriander.
- 2. Set aside a few coriander leaves for garnish.
- 3. Finely chop the remaining coriander.
- 4. Thoroughly wash the chili pepper.
- 5. Cut the chili pepper in half lengthwise.
- 6. Remove the seeds from the chili pepper.
- 7. Finely chop the deseeded chili pepper.
- 8. Peel the garlic clove.
- 9. Finely chop the garlic as well.
- 10. Place the minced meat into a large bowl.
- 11. Add the finely chopped coriander to the minced meat.
- 12. Add the finely chopped chili to the minced meat.
- 13. Add the finely chopped ginger to the minced meat.
- 14. Add the finely chopped garlic to the minced meat.
- 15. Crack the egg into the meat mixture.
- 16. Add breadcrumbs gradually.
- 17. Mix everything well until the dough is moldable.
- 18. Season the mixture with soy sauce.
- 19. Season the mixture with cayenne pepper.
- 20. Form small balls from the meat mixture.
- 21. Thread the meatballs onto the lemongrass skewers.
- 22. Brush the skewers with olive oil.
- 23. Grill or fry the skewers for approx. 5 to 6 minutes.
- 24. Turn the skewers while cooking.
- 25. Garnish the finished skewers with the reserved coriander leaves.
- 26. Serve the skewers immediately.
