🍽️ Spiced Lamb Meatballs with Wheat Salad

Ingredients
- 200 g soft wheat grains (e.g. Ebly)
- 4 garlic cloves
- 800 g lamb mince (Turkish supermarket)
- 1 tsp coriander (ground)
- 1 tsp cumin (ground)
- 1 pinch chili flakes (or cayenne pepper)
- 1 tsp sweet paprika powder
- salt
- pepper (from the mill)
- 1 egg
- rapeseed oil (for frying)
- 4 sprigs mint
- 3 tomatoes
- 6 shallots
- 40 ml olive oil
- 1 lemon (juice)
- lemon slice (for garnishing)
- mint (for garnishing)
Instructions
- 1. Cook the bulgur wheat according to the package instructions.
- 2. Drain the grain and rinse it under cold water to cool it down.
- 3. Peel the garlic clove and chop it finely.
- 4. Place the minced meat into a bowl.
- 5. Season the meat with coriander, cumin, chili, paprika powder, salt, and pepper.
- 6. Add the chopped garlic and the egg.
- 7. Knead the mixture well until all ingredients are combined.
- 8. Moisten your hands with a little water.
- 9. Form small, equal-sized balls from the meat mixture.
- 10. Heat some rapeseed oil in a frying pan.
- 11. Fry the lamb meatballs on all sides until golden brown over medium heat.
- 12. The total frying time should be 6 to 8 minutes.
- 13. Wash the mint under running water.
- 14. Shake the mint dry.
- 15. Cut the mint leaves into fine strips.
- 16. Wash the tomatoes.
- 17. Cut the tomatoes into small cubes.
- 18. Peel the shallots.
- 19. Slice the shallots into thin rings.
- 20. Place the cooled bulgur wheat into a large bowl.
- 21. Add the tomato cubes, the cut mint, and the shallot rings.
- 22. Add the lemon juice and the olive oil.
- 23. Toss everything well together.
- 24. Season the salad with salt and pepper to taste.
- 25. Thread the finished lamb meatballs onto wooden skewers.
- 26. Serve the skewers together with the wheat salad on plates.
- 27. Garnish the dish with lemon slices and fresh mint sprigs.
