🍽️ Vegetable Meat Boats with Cheese

Ingredients
- 1 onion
- 500 g potatoes
- 300 g carrots (3 carrots)
- 700 g mixed minced meat
- 3 eggs
- 2 tsp dried pizza herbs
- salt
- pepper
- 3 large tomatoes
- 600 g red bell peppers (3 red bell peppers)
- 285 g corn (can or tetrapak; drained weight)
- 200 g feta cheese (9% fat)
Instructions
- 1. Peel the onion and cut it into small cubes.
- 2. Wash the potatoes and the carrots.
- 3. Peel the potatoes and the carrots.
- 4. Roughly break apart the potatoes and the carrots.
- 5. Grate the potatoes and the carrots finely using a box grater or a food processor.
- 6. Squeeze the grated potatoes and carrots well with your hands so they are not too wet.
- 7. Place the squeezed mixture into a bowl.
- 8. Add the minced meat to the bowl.
- 9. Add the eggs to the bowl.
- 10. Add the pizza herbs to the bowl.
- 11. Season the mixture with salt.
- 12. Season the mixture with pepper.
- 13. Knead everything with the dough hooks of a hand mixer until it forms a firm dough.
- 14. Line a baking tray with baking paper.
- 15. Spread the meat dough evenly on the baking tray using a spatula.
- 16. Preheat the oven to 225 degrees Celsius (fan: 200 degrees Celsius, gas: setting 3-4).
- 17. Bake the meat dough in the preheated oven for about 20 minutes.
- 18. Wash the tomatoes.
- 19. Remove the hard stems and green parts from the tomatoes.
- 20. Cut the tomatoes into cubes.
- 21. Halve the bell peppers.
- 22. Remove the seeds from the bell peppers.
- 23. Wash the deseeded bell peppers.
- 24. Cut one of the bell peppers into small cubes.
- 25. Cut the remaining bell peppers into 10 wide strips.
- 26. Place the pepper strips on a plate.
- 27. Cover the plate with cling film.
- 28. Drain the corn in a sieve.
- 29. Cut the feta cheese into small cubes.
- 30. Take the baked meat dough out of the oven.
- 31. Distribute the tomato cubes on the meat dough.
- 32. Distribute the pepper cubes on the meat dough.
- 33. Distribute the drained corn on the meat dough.
- 34. Distribute the feta cheese cubes on the meat dough.
- 35. Press the toppings firmly onto the meat dough.
- 36. Bake the topped boats for another 10 minutes in the oven.
- 37. Take the finished boats out of the oven.
- 38. Let the boats cool down for about 30 minutes.
- 39. Cut the cooled cake into 10 equal pieces.
- 40. Thread one pepper strip onto a toothpick.
- 41. Place the toothpick with the pepper strip like a sail onto a piece of cake.
