🍽️ Cucumber Spiral Salad for the Thermomix

Ingredients
- 2 cucumber
- 150 g cherry tomatoes
- 0.5 red onion
- 1 garlic clove
- 1 small handful parsley
- 150 g Greek yogurt
- 20 g apple cider vinegar (or red wine vinegar)
- 25 g olive oil
- 0.5 tsp sugar
- 1 tsp dried dill
- 1 pinch salt
- 1 pinch pepper
Instructions
- 1. Cut the cucumbers into thin spirals using a spiralizer. You can also use a vegetable peeler to create the spirals.
- 2. Halve the cherry tomatoes and slice the onions into very thin pieces.
- 3. Now add all the prepared ingredients into a large bowl.
- 4. For the dressing, chop the garlic and parsley in the mixing bowl for 5 seconds on speed 8.
- 5. Add the remaining ingredients for the dressing and mix everything for 20 seconds on speed 4.
- 6. Pour the dressing over the salad and mix everything thoroughly.
