🍽️ Stuffed Cucumbers with Mushrooms, Ham and Cheese

Ingredients
- 2 cucumbers
- 100 g mushrooms
- 1 red bell pepper
- 1 clove of garlic
- 100 g turkey ham
- 50 g pitted black olives
- 75 g mozzarella
- salt
- pepper
- 50 g walnut kernels
- 4 sprigs parsley
Instructions
- 1. Peel the cucumbers completely.
- 2. Cut the cucumbers in half lengthwise.
- 3. Remove the inside of the cucumber halves to hollow them out.
- 4. Clean the mushrooms of dirt.
- 5. Slice the mushrooms into thin pieces.
- 6. Wash the bell pepper thoroughly.
- 7. Remove the inside of the bell pepper.
- 8. Cut the bell pepper into small cubes.
- 9. Peel the garlic.
- 10. Finely chop the garlic.
- 11. Cut the ham into narrow strips.
- 12. Chop the olives coarsely.
- 13. Cut the mozzarella into small cubes.
- 14. Mix the mushrooms with the bell pepper.
- 15. Add the chopped garlic to the mixture.
- 16. Add the ham strips to the mixture.
- 17. Add the chopped olives to the mixture.
- 18. Add the mozzarella cubes to the mixture.
- 19. Season the filling with salt.
- 20. Season the filling with pepper.
- 21. Fill the cucumber halves with the mixture.
- 22. Add a little water to a baking dish.
- 23. Place the stuffed cucumbers in the baking dish.
- 24. Preheat the oven to 225 degrees Celsius.
- 25. Set the fan-forced setting to 200 degrees Celsius.
- 26. Set the gas mark to 3 to 4.
- 27. Simmer the cucumbers in the oven for approx. 20 minutes.
- 28. Chop the walnuts while the cucumbers are cooking.
- 29. Wash the parsley.
- 30. Shake the parsley dry.
- 31. Finely chop the parsley.
- 32. Sprinkle the finished cucumber boats with the walnuts.
- 33. Sprinkle the finished cucumber boats with the parsley.
