🍽️ Refreshing Cucumber Salad with Peanuts

Ingredients
- 1 cucumber
- 1 small red bell pepper
- 2 garlic cloves
- 1 tbsp peanut kernels
- juice of half a lime
- 2 tbsp light sesame oil
- mint (for garnish)
Instructions
- 1. Peel the cucumber completely.
- 2. Cut the cucumber in half lengthwise.
- 3. Remove the seeds from the cucumber halves.
- 4. Slice the cucumber flesh into thin rounds.
- 5. Place the cucumber slices in a serving bowl.
- 6. Wash the bell pepper thoroughly.
- 7. Cut the bell pepper in half lengthwise.
- 8. Remove the stem and seeds from the bell pepper.
- 9. Cut the bell pepper into very thin strips.
- 10. Peel the garlic clove.
- 11. Mince the garlic very finely.
- 12. Mince the peanuts very finely as well.
- 13. Mix the minced garlic with the minced peanuts.
- 14. Add the lime juice to the mixture.
- 15. Add the sesame oil to the mixture.
- 16. Whisk the dressing ingredients well together.
- 17. Pour the dressing over the cucumber slices.
- 18. Top the salad with the bell pepper strips.
- 19. Garnish the salad with fresh mint.
- 20. Serve the salad immediately.
