  1. 1. Peel the cucumber completely.
  2. 2. Cut off the ends of the cucumber.
  3. 3. Cut the cucumber crosswise into two equal halves.
  4. 4. Hollow out the cucumber halves using a spoon or a melon baller.
  5. 5. Dry the cucumbers thoroughly inside and outside with kitchen paper.
  6. 6. Toast the pine nuts in a pan without adding extra fat.
  7. 7. Let the toasted pine nuts cool down completely.
  8. 8. Mix the chili sauce thoroughly with the cream cheese.
  9. 9. Brush the inside of the hollowed cucumbers with the chili sauce and cream cheese mixture.
  10. 10. Fill the sushi rice into the cucumbers.
  11. 11. Press the rice firmly from both sides to secure it.
  12. 12. Cut each of the two cucumber pieces into six equal slices.
  13. 13. Arrange the cucumber slices attractively on a plate.
  14. 14. Segment the mandarins by removing the peel and membranes.
  15. 15. Place one to two mandarin segments on each cucumber slice.
  16. 16. Garnish the roll with the cooled pine nuts.
