🍽️ Cucumber Rolls with Mandarin and Pine Nuts

Ingredients
- 1 cucumber
- 2 tbsp pine nuts
- 2 tbsp chili sauce
- 1 tsp cream cheese
- 200 g ready-made sushi rice
- 1 mandarin
- 2 tsp red caviar (sea hare roe)
Instructions
- 1. Peel the cucumber completely.
- 2. Cut off the ends of the cucumber.
- 3. Cut the cucumber crosswise into two equal halves.
- 4. Hollow out the cucumber halves using a spoon or a melon baller.
- 5. Dry the cucumbers thoroughly inside and outside with kitchen paper.
- 6. Toast the pine nuts in a pan without adding extra fat.
- 7. Let the toasted pine nuts cool down completely.
- 8. Mix the chili sauce thoroughly with the cream cheese.
- 9. Brush the inside of the hollowed cucumbers with the chili sauce and cream cheese mixture.
- 10. Fill the sushi rice into the cucumbers.
- 11. Press the rice firmly from both sides to secure it.
- 12. Cut each of the two cucumber pieces into six equal slices.
- 13. Arrange the cucumber slices attractively on a plate.
- 14. Segment the mandarins by removing the peel and membranes.
- 15. Place one to two mandarin segments on each cucumber slice.
- 16. Garnish the roll with the cooled pine nuts.
- 17. Add a dollop of caviar as the final touch.
