🍽️ Crispy Cucumbers with Ham and Cream Cheese

Ingredients
- 1000 g large salad cucumber (2 large salad cucumbers)
- 1 onion
- 2 tbsp olive oil
- 100 g turkey ham (diced)
- salt
- pepper
- 1 pinch sugar
- 400 g chunky tomatoes (can)
- 0.5 bunch dill
- 100 g cream cheese (13% fat)
- 2 whole grain rolls
Instructions
- 1. Peel the cucumbers thoroughly.
- 2. Cut the cucumbers in half lengthwise.
- 3. Carefully scoop out the seeds with a teaspoon.
- 4. Slice the deseeded cucumber halves into about 1 cm thick slices.
- 5. Peel the onion.
- 6. Cut the onion in half.
- 7. Slice the onion halves into thin slices.
- 8. Heat the olive oil in a non-stick pan.
- 9. Fry the cucumber slices over high heat for 2 to 3 minutes until slightly crispy.
- 10. Add the onion slices and the ham cubes to the pan.
- 11. Fry everything together for another 2 minutes.
- 12. Season the mixture with salt, pepper, and a pinch of sugar.
- 13. Add the canned tomatoes.
- 14. Stir everything well to distribute the tomatoes.
- 15. Let the vegetable mixture simmer over medium heat for 5 minutes.
- 16. Wash the dill under running water.
- 17. Shake the dill dry.
- 18. Chop the dill coarsely.
- 19. Stir the cream cheese and the chopped dill into the warm vegetables.
- 20. Taste the dish and adjust seasoning with salt and pepper.
- 21. Serve the warm vegetables with fresh rolls.
