  1. 1. Wash the tomatoes thoroughly and pat them dry. Cut off the top of each to create a small lid. Use a spoon to scoop out the insides, including seeds and juice. Place the hollowed tomatoes upside down to drain.
  2. 2. Meanwhile, wash the cucumber and dry it well. Slice it into 12 rounds of equal thickness. Carefully scoop out some of the center flesh from each slice with a spoon to hollow them out slightly.
  3. 3. Rinse the crab meat and pat it dry. Finely chop the crab meat. Wash the radishes and dry them. Cut 2 radishes into 6 thin wedges each and finely chop the remaining radishes. Peel the shallot and chop it finely as well.
  4. 4. Place the drained quark in a bowl. Mix it with the chopped crab meat, radishes, and shallot. Season the mixture with salt and pepper. Spread the quark mixture onto the cucumber slices and garnish with the radish wedges.
  5. 5. Season the inside of the tomatoes with pepper and herb salt. Shape the goat cheese into 12 small balls and press them into the tomatoes. Wash the basil leaves, pat them dry, and place one leaf in each stuffed tomato.
