  1. 1. Remove the crusts from the white bread.
  2. 2. Slice the surimi (fish-like processed product) into thin slices.
  3. 3. Set aside about one to two tablespoons of finely chopped surimi for later.
  4. 4. Peel the cucumber.
  5. 5. Slice the cucumber crosswise into thin rounds.
  6. 6. Mix the crème fraîche with lemon juice, salt, and pepper.
  7. 7. Spread the seasoned crème fraîche onto the bread slices.
  8. 8. Place the cucumber slices on top of the spread bread.
  9. 9. Distribute half of the surimi slices over the cucumbers.
  10. 10. Top the filled breads with the remaining bread slices.
  11. 11. Spread the chopped surimi remnants onto the sandwiches.
  12. 12. Cut the sandwiches diagonally in half.
  13. 13. Arrange the sandwiches on a plate.
