🥗 Crunchy Salad with Cucumber, Tomato, and Radish

Ingredients
- 1.5 Cucumbers
- 1 Bunch Radishes
- 1 Bunch Arugula (80 g)
- 250 g Cherry Tomatoes
- 4 Tbsp Olive Oil
- 3 Tbsp Lemon Juice
- 1 tsp Mustard
- 1 tsp Honey
- Salt
- Pepper
- 40 g Pine Nuts
- 0.5 Bunch Basil
Instructions
- 1. Rinse the cucumber and the radishes under running water.
- 2. Cut the cucumber into small cubes.
- 3. Slice the radishes into paper-thin rounds.
- 4. Wash the arugula (a type of leafy green) and shake it dry.
- 5. Wash the tomatoes and cut them in half.
- 6. Whisk the oil, lemon juice, mustard, and honey in a small bowl until smooth.
- 7. Season the dressing generously with salt and pepper.
- 8. Place the cucumbers, radishes, tomatoes, and arugula in a large bowl.
- 9. Pour the dressing over the vegetables.
- 10. Gently toss the ingredients until they are well combined.
- 11. Place the pine nuts in a dry pan.
- 12. Toast the pine nuts over medium heat for 3 minutes until fragrant and lightly golden brown.
- 13. Remove the pan from the heat to prevent the nuts from burning.
- 14. Wash the basil and shake it dry.
- 15. Pluck the leaves from the stems.
- 16. Sprinkle the finished salad with the toasted pine nuts and basil leaves.
