🥗 Fresh Cucumber and Radish Salad with Feta

Ingredients
- 1.5 cucumbers
- 1 bunch radishes
- 1 bunch arugula (80 g)
- 4 pickles
- 200 g feta
- 4 tbsp olive oil
- 3 tbsp lemon juice
- 1 tsp mustard
- 1 tsp honey
- salt
- pepper
Instructions
- 1. Rinse the cucumber and radishes under running water.
- 2. Slice the cucumber into thin rounds.
- 3. Slice the radishes into thin rounds as well.
- 4. Wash the arugula (a type of leafy green) thoroughly.
- 5. Shake the arugula dry so it is not wet.
- 6. Cut the gherkins (small sour cucumbers) in half lengthwise.
- 7. Slice the halved gherkins into thin pieces.
- 8. Crumble the feta cheese into small pieces using your hands.
- 9. Whisk the oil together with the lemon juice, mustard, and honey in a small bowl.
- 10. Stir until a smooth sauce forms.
- 11. Season the sauce generously with salt and pepper.
- 12. Place the slices of cucumber, radish, and gherkin in a large bowl.
- 13. Toss the vegetables well with the dressing.
- 14. Divide the salad onto the plates.
- 15. Top the salad with the feta pieces.
- 16. Sprinkle the dry arugula over the salad.
