  1. 1. Bring a pot of water to a boil and carefully add the eggs. Boil the eggs for about 10 minutes until they are hard-boiled. Remove the eggs from the water and rinse them immediately under cold water to make the shells easier to remove. Peel the eggs completely. Slice the peeled eggs into thin rounds.
  2. 2. Wash the cucumber thoroughly under running water. Cut off the hard ends on both sides of the cucumber. Slice the cucumber into very thin rounds, using a vegetable peeler or a sharp knife.
  3. 3. Put the oil, vinegar, mustard, honey, salt, and pepper into a small jar with a lid. Close the jar tightly and shake it vigorously until the ingredients are mixed into a creamy sauce. Taste the dressing and adjust the seasoning to your liking.
  4. 4. Arrange the cucumber slices, egg slices, and salmon attractively on the plates. Drizzle the prepared dressing over the salad. Season everything once more lightly with salt and freshly ground pepper. Sprinkle the salad with fresh cress and serve immediately.
