  1. 1. Bring water in a pot to a boil. Gently place the eggs in the water and boil them hard for 9 minutes. Drain the hot water. Immediately rinse the eggs under cold water to stop the cooking process. Peel off all eggshells completely. Let the eggs cool down briefly. Then chop the eggs very finely.
  2. 2. Squeeze the lemon half to extract the juice. Take a bowl and add the cream cheese. Season with salt and pepper. Add 1 tablespoon of lemon juice. Add a dash of Worcestersauce. Stir the mixture until smooth and creamy.
  3. 3. Remove the dry ends of the spring onions. Wash the spring onions thoroughly. Cut them into fine cubes. Quarter the bell peppers. Remove the seeds from the bell peppers. Wash the pepper cubes. Cut them into fine cubes as well.
  4. 4. Wash the dill. Shake it dry to remove excess water. Pluck the fine dill leaves from the stems. Chop the dill finely. Add the chopped eggs to the cream cheese mixture. Add the spring onions. Add the pepper cubes. Add the dill. Mix everything well into the cheese mixture.
  5. 5. Wash the cucumber thoroughly. Slice the cucumber lengthwise into very thin slices. Use a vegetable peeler or a slicer for best results to get even slices.
  6. 6. Cut a piece of cling film to approximately 30x40 cm. Lay the film flat on your work surface. Lay the smoked salmon slices overlapping on the film. Ensure that the film is almost completely covered by the salmon.
  7. 7. Place the cucumber slices on the salmon perpendicular to the short side of the film. Arrange the slices overlapping, similar to roof tiles. Gently pat the cucumber slices with kitchen paper to remove moisture.
  8. 8. Fill the cream cheese mixture into a piping bag. Attach a piping tip to the end of the bag. Pipe the mixture onto the lower, short edge of the cucumber slices.
  9. 9. Use the cling film to roll the mixture tightly. Place the roll in the refrigerator for 1 hour to let it firm up.
  10. 10. Cut the roll into approximately 2 cm thick slices while still in the film, just before serving. Carefully remove the slices from the film. Arrange the slices on a plate. Garnish with fresh cucumber slices and dill if desired.
