🥗 Fresh Cucumber and Herb Salad

Ingredients
- 4 cucumbers
- 0.25 celeriac
- 2 handfuls fresh herbs (cilantro, lemon balm, basil)
- 4 tbsp olive oil
- salt
- pepper (freshly ground)
- 2 tbsp balsamic vinegar
Instructions
- 1. Thoroughly wash the cucumbers under running water.
- 2. Use a vegetable peeler to slice the cucumbers into long, thin strips.
- 3. Arrange the cucumber slices on four separate plates.
- 4. Peel the celery stalks completely.
- 5. Grate the celery into fine shreds using a grater.
- 6. Distribute the grated celery shreds evenly over the cucumber slices.
- 7. Mix oil, vinegar, two tablespoons of cold water, salt, and pepper in a small bowl.
- 8. Pour the finished salad dressing evenly over the vegetables.
- 9. Generously top the salad with the fresh herbs.
- 10. Serve the salad immediately.
