🍽️ Refreshing Cucumber Kefir Soup

Ingredients
- 1 cucumber
- 300 g kefir
- 200 g yogurt
- 1 tbsp parsley (chopped)
- 1 tbsp chives (cut into rings)
- 1 tbsp chervil (chopped)
- 1 tbsp dill (chopped)
- 1 egg
- 1 tbsp olive oil
- 1 tbsp mustard
- 1 tbsp vinegar
- salt
- pepper (from the mill)
Instructions
- 1. Peel the egg and chop it very finely.
- 2. Add kefir, yogurt, two-thirds of the herbs, mustard, and vinegar to a blender. Puree the mixture until smooth. Season with salt and freshly ground pepper.
- 3. Peel the cucumber, cut it in half lengthwise, and remove the seeds. Cut the cucumber flesh into small cubes. Sauté the cubes in hot oil and add a little salt.
- 4. Ladle the cold soup onto plates or into bowls. Top with the sautéed cucumbers. Sprinkle with the remaining fresh herbs and the chopped egg before serving.
